    Milk kefir is a delicious fermented milk that is packed with some of the highest concentrations of bacteria of any fermented food! This ferment is a thing of legends and conquests (literally).
    Today I'm going to show you how to re-hydrate or activate kefir grains. I'm going to show you how to make kefir 2 different ways, one is with cultures for health dehydrated grains and the other is with a one time use powder!

    I so wish I could get some people to understand this. Especially the ones who wash with it daily followed by sanitizer every 10 minutes 🙄

    I am SO glad I watched this video. I'm about to start making milk and juice kefir. Shooo, I would have poured a half cup down my husband and he would have booted me outside. He does eat fermented sauerkraut, nearly every day. But, until we know if he has critters down in there, we can go slow! Thanks so much. Also glad I got the starter kit powder to see how everyone reacts.

    I had forgotten that I made Judie many years ago. My children were somewhat grossed out by it so never tried it. And yet, when I purchased at the store not too long ago they drank it. Both adults and in their own homes now. Thank you for the video and memory.

    I use a whisk to loosen the solids in my jars before I pour them thru the strainer. A small balloon-type whisk is great for pushing the kefir liquid from the grains in the strainer without busting up the grains themselves. You want to keep them intact and it’s much easier to scoop them into the next jar when they’re larger.
    If you want to grow grains quickly like for selling on eBay or to increase the tartness, you can add powdered lactose to your milk (about a teaspoon per liter) and they’ll gobble up the extra “fuel” happily.
    One of my pals always wanted thicker kefir and my son (a chef) suggested I add pectin or powdered fiber to the kefir at the straining step (when it’s room temp) by “dusting” it on top. I experimented with different fiber additives and hit upon Heather’s Acacia Fiber -about a tablespoon-per liter, dusted on the surface of the kefir in my big measuring cup-full for about five minutes and then whisked into the liquid. It serves as a prebiotic in the gut which increases the butyrate (supposedly) and B-6 content as you digest it. That’s key to improving your health with kefir.

    Back in the day I used to have a goat dairy and I made kefir. I liked the grains over the powder. The second ferment with fresh berries and vanilla was amazing! I really need to get back into it again when the cow freshens! Thanks Anna!

      You can make them with first or second ferment, second ferment just gives it more nutrition and benefits!

    Hello again I'm almost caught up on all the videos on your #fermentedfebruary collaboration playlist. I was subscribed to some of the participants already and now I'm subscribed to all of the participants or I will be by the time I finish the playlist today. Fermenting is a regular way of preserving and enjoying garden fresh taste and crispness months after the harvest, whether grown on my homestead or bought from others. I was so happy to see this collaboration to get new ideas from others who like fermenting too because it gives me a feeling of belonging to a community even if it is a virtual community. Thank you for putting this collaboration together and to all those who participated and spread the word, I was late to the party but I will continue to share the playlist with others who I know like to ferment as well as those I'm trying to persuade to try fermenting.

    I've never cared for white milk but loved chocolate milk. I'm watching the video as I type this so I'm wondering if you could make the milk kefir using chocolate milk.       I wouldn’t make the first ferment with chocolate but you could totally add it for the second ferment or add it after for consumption! I’m so happy you’re enjoying the videos!

    The powder kefir can actually make several batches of kefir. Up to 7. You would just use some of the first batch to make the subsequent batches. Just like you would do for homemade yogurt. Wasn’t sure if you knew that 🥰

      You can also use store bought kefir as starter. I sometimes buy a bottle to “boost” my grains.

    YEARS, ago a friend of mine told me about Kefir….but I was too chicken to try….fearing the feel worse period. I wish I had thought about taking smaller amounts, it makes so much sense.       I have no idea! I’m still trying to sort out reintroducing ferments but I do think I will start with well fermented dairy, I think it will digest better than veggies for me. I haven’t had any yet aside from the tasting here!

    My sister in law re-cultured store bought milk and thought the reheating bit was overkill too. So she followed the directions with a half batch and then left the milk unheated in the other half and there was no difference in the culture-ability.
