Milk kefir is a delicious fermented milk that is packed with some of the highest concentrations of bacteria of any fermented food! This ferment is a thing of legends and conquests (literally).
Today I'm going to show you how to re-hydrate or activate kefir grains. I'm going to show you how to make kefir 2 different ways, one is with cultures for health dehydrated grains and the other is with a one time use powder!
Both kefir products I used in the video can be found on Amazon so I'm going to put links to both right here so you can get what you need to follow along AND support the channel at the same time!

"Honestly, if you even have that stuff in your house, you should just dump it."
I so wish I could get some people to understand this. Especially the ones who wash with it daily followed by sanitizer every 10 minutes 🙄
Thank you for the recipes and the collaboration. I really like the fact that you included newbie fermenters (makes it less intimidating for those of us who are also just starting out) and introducing us to so many new channels.
I love sharing my passion with people! I’m fascinated by it!
Thank you so much for keeping the spill in the video. You are such a hoot, you make my day! Blessings from Indy 💜 🙏
I am SO glad I watched this video. I'm about to start making milk and juice kefir. Shooo, I would have poured a half cup down my husband and he would have booted me outside. He does eat fermented sauerkraut, nearly every day. But, until we know if he has critters down in there, we can go slow! Thanks so much. Also glad I got the starter kit powder to see how everyone reacts.
I have never made keifer. I would love make though. As for the contest here, I think everyone is a winner by learning more on fermenting and the recipes. I can't wait to start making some of them.
I agree! Im learning so much!!!
FIrst time viewer and new subbie. You are such an AWESOME teacher and I really appreciate the time you take to cover all the bases and even the finer details. As a nurse I first started researching probiotics and gut health over 25 years ago and I am so glad that FINALLY this knowledge is getting out there.
My kids and I truly enjoy blueberry milk kefir!!! I definitely want to try this!!!
Yum! I’m going to try that!
I love goat milk kefir.
I’ll have to try this with cow’s milk
Thank you so much for sharing
Both are SO good!
I had forgotten that I made Judie many years ago. My children were somewhat grossed out by it so never tried it. And yet, when I purchased at the store not too long ago they drank it. Both adults and in their own homes now. Thank you for the video and memory.
That’s so interesting!
Thank you for helping us newbies learn to start slowly.
Interesting another lesson. Thanks for sharing. Thanks for hosting this collaboration.
Thank you for watching! It’s so much fun!
I use a whisk to loosen the solids in my jars before I pour them thru the strainer. A small balloon-type whisk is great for pushing the kefir liquid from the grains in the strainer without busting up the grains themselves. You want to keep them intact and it’s much easier to scoop them into the next jar when they’re larger.
If you want to grow grains quickly like for selling on eBay or to increase the tartness, you can add powdered lactose to your milk (about a teaspoon per liter) and they’ll gobble up the extra “fuel” happily.
One of my pals always wanted thicker kefir and my son (a chef) suggested I add pectin or powdered fiber to the kefir at the straining step (when it’s room temp) by “dusting” it on top. I experimented with different fiber additives and hit upon Heather’s Acacia Fiber -about a tablespoon-per liter, dusted on the surface of the kefir in my big measuring cup-full for about five minutes and then whisked into the liquid. It serves as a prebiotic in the gut which increases the butyrate (supposedly) and B-6 content as you digest it. That’s key to improving your health with kefir.
Back in the day I used to have a goat dairy and I made kefir. I liked the grains over the powder. The second ferment with fresh berries and vanilla was amazing! I really need to get back into it again when the cow freshens! Thanks Anna!
Perfect timing for this video. I was just thinking about milk kefir after yesterday’s video. I’m quite new to ferments. So it’s all very interesting
That’s awesome! You’ll love it!!
I have been curious about kefir-such an informative video! Thank you for sharing.
Thanks Anna! I love kefir. Need to start doing it again!! Love it flavored with organic orange rind
I agree! I enjoy that too!
love milk kefir. i have been doing it for the past 3 years
Milk kefir is so versatile! Second ferment allows cheese or sour cream. Thank you.
You can make them with first or second ferment, second ferment just gives it more nutrition and benefits!
I would use it in pasta, fresh fruits, smoothies, the variety is unlimited. I'm so making this Kefir! Thank you Anna! Many blessings.
Sounds delicious!
@@FermentedHomestead like a creamy pesto?
@@lauragiacobbe7334 I think that would be yummy! Just make sure not to heat it past 110 if you want to maintain the probiotics
@@FermentedHomestead yes, of course.
Thanks for adding the history of milk kefir grains. Very neat to hear.
Thank you for the info. I prefer the Kefir made with the grains. It tastes much better and more health benefits.
So interesting to learn about Kefir! I plan to add this to my list that is continually growing! Thank you 😊
I’ve never made my own kefir. I’ll definitely have to try this!
Hello again I'm almost caught up on all the videos on your #fermentedfebruary collaboration playlist. I was subscribed to some of the participants already and now I'm subscribed to all of the participants or I will be by the time I finish the playlist today. Fermenting is a regular way of preserving and enjoying garden fresh taste and crispness months after the harvest, whether grown on my homestead or bought from others. I was so happy to see this collaboration to get new ideas from others who like fermenting too because it gives me a feeling of belonging to a community even if it is a virtual community. Thank you for putting this collaboration together and to all those who participated and spread the word, I was late to the party but I will continue to share the playlist with others who I know like to ferment as well as those I'm trying to persuade to try fermenting.
I just bought milk kefir for the first time to try it. It's just like drinkable yogurt. I really liked it and will probably try making it myself now! Thanks for the video.
That’s exactly what it’s like!
Thank you for this information. Loved hearing the history of Kiefer. I'm lactose intolerant but I might try for hubby who has tummy issues.
Thanks for expanding my knowledge in so many fermented areas.
I’m happy to share!
I have an allergy to milk, so I make water and coconut kefir. Thanks for Fermented February. Love all these great fermenting recipes.
Any tips to making coconut kefir?? :)
Thanks Anna for the collaboration and all of your recipes.
Thanks for sharing! I have the milk kefir grains that I’ve been using them for about 3 years & learning so much from your channel! 🤗🇨🇦
This video was very helpful. I’ve been wanting to try to make kefir. I have the courage to do it now.
The history of this drink is interesting. Thanks for sharing! Definitely a more advanced fermentation! You did well explaining!
It’s actually the simplest one I know once it’s activated! It just takes daily tending
Can’t have much milk, however one of your collaborators -Hood to Homestead shared a water kefir recipe. So I’m getting water kefir grains. This series has opened a whole lot of new fermentation ideas for me.
Thank you Anna for this Fermented February Collaboration, so many wonder recipes.
I love milk kefir! I have only used the fresh grains…
I’m going to try making it with those once I’m moved
I never had any kind of Kefir but would like to try it. Thanks for sharing!
Wow, this was really full of great info for me. Thank you for all you are doing with the month of Feb. I look forward to giving this a try.
I’m excited it has been helpful for you!
Kefir is the best. Thanks for sharing all your knowledge with us Anna. The history of kefir is fascinating.
Never heard of this, but im so excited to try all of these.
Thanks. I've been meaning to start kefir.
Sounds like a good time now 😂
Thank you! This would be so good in smoothies.
It sure is!
I have never tried kefir but this month has really made me want to try it.
I'm finding all these videos for fermented February fascinating. Some much information. Thank you all who participated!!
Thanks for sharing! Could definitely tell the difference in the look of the two types. Another type of fermenting I had never heard of. Learning new things!
They really did look different
I've never cared for white milk but loved chocolate milk. I'm watching the video as I type this so I'm wondering if you could make the milk kefir using chocolate milk. I'll have to watch the video to see if you mention it. 😁 I love all of these fermenting videos. I've learned so much so far and I have made a list of which ones I'll be making in March. 💗
I wouldn’t make the first ferment with chocolate but you could totally add it for the second ferment or add it after for consumption! I’m so happy you’re enjoying the videos!
Oh my goodness, what a crazy story!
Thx U for all ur information on kefir, I’ve been making it for 6 months now and feel great but I didn’t know about all the other stutlike sour cream, cheese ur the best talker🥰
I've never made milk kefir before, but I will try this. Got to get some milk kefir grains. Interesting history aboout kefir.
The powder kefir can actually make several batches of kefir. Up to 7. You would just use some of the first batch to make the subsequent batches. Just like you would do for homemade yogurt. Wasn’t sure if you knew that 🥰
I didn’t know that! Thank you for telling me!
You can also use store bought kefir as starter. I sometimes buy a bottle to “boost” my grains.
I use it for far more than 7 and it just keeps getting better. Until it doesn't. And then I use another packet of powder.
I love fermentation February collaboration!
Love making my own kefir. Store bought milk does work, but not the ultra pasteurized type. 😁
That’s what I’ve heard, I prefer raw but I don’t have access at the moment!
This is really cool and I really like that you give the history like that I’m wanting to try some plant-based milk version
Wow Thanks for sharing. Never tried any ferments. Love this series. I will be trying one I hope.
Can't wait to get my milk kefir grains. Thank you so much for your inspiring videos!
Excellent information thank you 👏🙋♀️
💜
This sounds very interesting . You gave us such great information. I’ve really enjoyed this collab. I’ve learned so much information.
Glad it was helpful! I love sharing what I'm learning because it's so fascinating to me!
I love kefir! I'm so glad you showed how to use the grains. Thanks
Anna, thank you for sharing and showing the blunder! Makes us feel like we can relate to real people! Have really enjoyed your channel.
The history is amazing
Thank you Anna for another amazing video and the history behind the kefir grains.
😊 💜
This is interesting! All of this is so new to me! It's very exciting! Thanks for sharing!
YEARS, ago a friend of mine told me about Kefir….but I was too chicken to try….fearing the feel worse period. I wish I had thought about taking smaller amounts, it makes so much sense. Why didn’t I think of that 🤦🏻♀️. I have been watching your Sibo journey should you be using that now? Thank you for this series, you have me hooked…I NEED MORE INFO. Each type of ferment seems like another rabbit hole. 😁
I have no idea! I’m still trying to sort out reintroducing ferments but I do think I will start with well fermented dairy, I think it will digest better than veggies for me. I haven’t had any yet aside from the tasting here!
I’m so happy you’re following along! I’m so overwhelmed trying to figure it out and I’m hoping to help others who feel like I do once j actually do figure it out
I am loving all these videos. Thank you for planning all this and teaching us!
I’m happy you’re enjoying!
Interesting history, I have not tried kefir but I think I would like to give it a try. I do like eating fermented foods and I do understand the benefits for good gut health, thanks for sharing.👩🏽🌾🙏🏽🧡💖
Im definitely interested in learning all types of ferments, thanks for sharing ☺
I'm actually doing it! I'm putting together my first ferments right now.
Nice collaboration have enjoyed watching them. Thank you
I’m happy you’re enjoying!
I need some milk goats. Totally going to try this.
Nice!
I did not know what keifir before thank you
This is interesting, so many things adding to my list to try!
Thanks for the history and the information for making this.
I’m happy you enjoyed!
Thank you Anna, I have learned so much and have really enjoyed all of the videos ❤️
This is another ferment we need to try. 😊
Wow I've always been afraid of fermenting foods but I have a friend that makes kefir and I'm excited to try this recipe!
Now that looked like something I would do! First spill. I tend to like my yogurt with some "tooth" , but I like drinkable kefir. I now have the confidence to give this a try.
That makes me happy to hear! I think you'll love it!
Very interesting. I've never had milk kefir. Am willing to try it. Thanks for your great explanation.
Thank you for explaining all that! Going to build up to that!
Yay!
I just got some water and milk kefir grains delivered and I'm excited to start this. ^_^
Thanks for sharing! This is a more advanced fermentation. Maybe in the future I will be able to do this.
I'm loving fermented February. I have learned so much. Thank you!!
My sister in law re-cultured store bought milk and thought the reheating bit was overkill too. So she followed the directions with a half batch and then left the milk unheated in the other half and there was no difference in the culture-ability.
That’s good to know! I was thinking it was similar to yogurt with breaking down the protein to make it thicker
This is so interesting.
Wow! How versatile is this kefir! Amazingly versatile ! Thank you!
This was very informative…can’t wait to give it a try.
That was interesting. Not sure I'm ready for this. Have really enjoyed these videos. Thank you!
Love learning about all these fun ferments! Thanks for putting this together.
I’ve enjoyed learning and watching all these great fermenting videos!
Thank you for your time and willingness to teach.
Wow! That turned out so great and so healthy for us! Love it! ❤️ I agree with another commenter that everyone is a winner with all we learned! Plus we learned about a lot of amazing channels!
I love kefir never thought of making it. I'm going to try this. Thank you!
I have not decided about kefir yet. I am not one for drinking milk and don’t know about it. I think that I am going to try other ferments first. Thanks for the video.
I tried store bought kefir and it was good. I need to try making my own.
Thank You!! Learning so much.
Thank you for the warning & history.
Thank you so much for putting on this collab. I’m learning so much I didn’t know I needed to know!
I love watching your videos and seeing all the things that you are doing. Thank you
This is so informative
Thank you ☺️
Thanks to Jen i found your channel on fermenting. I have always wanted to learn about fermentation. Just subscribe to your channel!
I'm excited you're here! Jenn is amazing, love her so much! That ginger looked amazing
I tried kefir one time before and chugged it like plain milk - YUCK! If I had known what to expect I might have liked it. I do like yogurt though so I'll try it again. Thanks. Blessings from Indy💜🙏
Love kifir. Thanks for sharing. Blessings
Thanks for the info. Never made this
