- Chana masala, also known as channay, chole masala, chole or chholay, is a dish originating from the Indian subcontinent. The main ingredient is a variety of chickpea(garbanzo beans) called chana .
Chana masala is vegan and gluten free. you can serve it with naan or rice.

Boiled or canned chickpeas(garbanzo beans) 2 cups
oil 4 tbsp
onions 1/2 cup
ginger paste 1 tbsp
Garlic paste 1 tbsp
salt
chili powder 1 tsp
coriander powder 1 tsp
cumin 1 tsp
turmeric 1/2 tsp
amchur 1 tsp
kalinji( nigella seeds) 1 tsp

I love Indian cooking. And I love how masala is different depending in region. I'm more familiar with masalas using different ingredients and cooking methods than what I see here.. But this is fun to learn. Indian food is so wonderful.

I hate when people put "easy" in the description and then half the ingredients that they use in the recipe are unavailable in smaller towns. 👎
You have to take into account the recipe (or the video) might just not be made in the same country. That said, sub the amchur with lemon juice (add it at the end instead) and replace the nigella seed with celery seeds. You should be able to find those and the recipe really is super easy and so tasty. When in doubt, give "[exotic ingredient] substitute" on Google a try. You'll often find some very close substitute.

Wow, this recipe is really good. I used ground ginger and dried garlic because I didn't have fresh and didn't want to take an extra trip the store. Still really good. I make this occasionally but I put less ingredients, once done I eat with oven roasted pita bread...it's delicious.

Tried it, love it. Thank you I took the advise of one of the viewers and blended some chickpeas with tomatoes to make the puree( thank you @ proud atheist). Used the water I boiled the chickpeas with instead water. As I did not have enough chickpeas I added some black beans. Turned out well almost like chilli. Skipped mango powder and nigella seeds.

This is an excellent recipe, and has become a regular in my home. I use dried chickpeas, which I re-hydrate and cook, rather than the salty canned ones. Also, I use extra hot red chili powder, to give it a touch of heat. Take care.

This will be my go-to Chana Masala recipe from now on. Tweaks - I used tomato paste plus water rather than fresh tomato, and next time I'll add a teaspoon of tamarind paste to up the sourness slightly. My amchur was very old, maybe that's the culprit.
Now to find the perfect restaurant-style veg curry.
Made this last night and missed a lot of spices bit the outcome qas.superb. fingerlicking good. 4 kids gave mama an A+ 😂. Today i make chapati and feast goes on. And the immersion blender takes it to another level.

I'm really intrigued by this culture's food I've never tried it before. any of it I am super jealous the food looks so good and flavourful unfortunately where I live in the United States there are no good good restaurants near me to get quality food like this.

Just made this recipe to the T only thing I changed was I used ground cumin cuz it's all I had and used half the amount. Omg SOO GOOD. I had it with chapati and a salad and green beans

You can skip nigella seeds and instead of amchur powder you can use lemon juice for tartness.

Brings to mind teachings of Dr Nandita Shah, health advocate (look her up) showing it IS POSSIBLE to not use lots of oil (I won't even say oil-free, as it may scare you off even looking up her work! Lol) AND cook amazing Indian food. Thanks again
if you have health restrictions, (I do too) you can either use an alternative oil, or less, or none and substitute water or vegetable broth.

Melissa Native you do not need to buy ginger garlic paste. You can make your own. Just take 1 inch size ginger and few garlic cloves and run them in your blender with few tablespoons of water. Or , you can even use a grater to grate ginger and garlic. Hope this helps.
I don't have ginger garlic paste at all I'm just put into blender . Do it few years like it . Same as comment above .

Very delicious. I just make this morning. I did not have mango powdee but it still great. It' a keeper for future use. No need other recipe. I make naan bread with this recipe. The naan tecipe I got from cooking foodies
I love chana dal. I made this today and it was delicious. I would make one suggestion, though. Add more water and cook the chickpeas longer until they're tender - like cannellinni or lima beans. Thanks!

I made this the other day using dried chickpeas soaked and boiled and fresh garlic and ginger instead of paste. Superb! An instant classic which is now part of my culinary arsenal.
I just don't like the texture of chickpeas. But I was looking for a curry recipe that I could try with them, to have one last go at them.
Ingredients like ginger and garlic PASTA are new to me, is it way better for taste? Do I need to buy it in a special store? It looks amazing, so really hope I'm able to make one day!

Onions, ginger, garlic, chilli, coriander, turmeric, cumin, tomatoes, chickpeas, cilantro. All standard spices and herbs for a curry base, except the mango powder and kalonji onion seed. I make that 12 ingredients.
All in all it works but don't use olive oil and tomato puree should be chopped canned tomatoes because tomato puree is tomato concentrate and the sauce will be dry

Looks delicious, two years ago I found a traditional chicken curry recipe, I bought extra spices, since then it makes part of our menu, it's so good, savory, tasty, with some rice the best of the best, my favorite confort food, kids love it too, less the cardamom seeds 🤣 this recipe I think would have the same success, I have some extra chickpeas I would love to make this recipe next Friday with some naan, I was just planning our weekly menu 😋 😀 😊

El cheapo style recipe: (oh mango powder mango huh??? Mango?????) Anyway... El cheap: 2 cans garbanzos 1 can tomato pieces (or chop some tomato keep it two to one). Oil (screw ghee) and add some cheapo (I like trader Joe) curry powder. Don't burn the powder cooks fast like 10 seconds sometime in hot oil.... Throw in tomato and garbanzo and add some water to half the can of tomato and add water. Pepper. A chilli helps. Cayenne pepper is fine. Reduce till thick. Add in some parsley before it's done for color. Easy as hell and tastes prolly nearly as good as some person stewing this crap up for 4 hours. 🤪 Boil some basmati rice in a billion gallons of water then strain it. Noice. Once you make it my way you are no longer a person who HAS ALL DAY TO CURRY SOME STUPID BEANS lol

Thank you! Cooking pan is from Ikea! Amchur powder adds tartness to the dish you can substitute it with lemon juice at the end. Nigella /kolonji seeds also adds flavor to the dish.

a cup of water ... we call cup a glass ... your cup may be small ... a glass typically has 350 millilitre (12 fluid ounce) ... you should measure everything with same measure unit or know the ratio of chickpea to water ... (added:) from visual at 2:39 you can see that so called glass is just a small measuring cup ... that should give an idea ... water cooking as last step is like cooking any grain like rice so use your judgement ... caption says: half to 1 glass of water which is very wide range ... you think your chickpeas are not cooked when added to pan then use 1 glass else use half glass ... chickpeas are fickle to cook and mere more cooking time and more water may not really help and this is where video fails it does not say how to cook chickpeas but the most westerners who tried must have used canned chickpeas ... amount is both for extra cooking that curry needs as well as gravy consistency ... if you make gravy thin then you will have to adjust salt or else combined with bread / rice it will be bland ... in my opinion nigella is rarely used in north indian curries and amount shown in video is too much ... nigella is too spicy for western taste

I've made this and soaked the chick peas (dry from packet) overnight then boiled them for 20 mins and they are still not soft even after simmer 15 mins in this dish, what am I doing wrong?
Maybe use canned chickpeas instead
