@@Brian20Deco fun fact, on Hell’s Kitchen, he teaches and helps out the chefs if they need it, so if you see him get pissed it’s because he’s run through it multiple times and he’s sick of them messing up haha. The show just cuts out the parts where he’s really hands on.

I think part of it is that he mellowed down and also get tired if the exaggerated personality of the US shows. Try watching some of the UK Kitchen Nightmares and also documentaries about his early career and first Michelin stars.

It shows that he used to work many years in busy restaurants, i meant, very busy every night so he always rush. Over time, it informed this character of him. Very respect of this, feeling motivate.
