    This is a traditional way of preserving corn. Using a crock isn't necessary you could also use a gallon jar. Just keep the ratio of 1/2 cup salt per gallon of water over you corn that has been blanched for 7 minutes.

    I went out and got a #8 crock right after watching your video. Now all I need is corn. We normally take 20 dozen down to my aunt every year. I have a farmer friend that gives me all I need but as I'm sure you know that's in the fall right now we are tapping trees to do syrup. We do a couple thousand gallons of sap a year.

    Great video I'm from West Virginia and my aunt made all the corn. She passed a couple years ago and took her secrets with her. Idid get to here her talking once and i'm making some. You seem to be the bast I've seen making it .

      My family is from WV, too! People here in Virginia think it sounds awful but I have some many memories tied to that taste ❤️ Hope you give it a try sometime

    You don't need to blanch vegetables to lacto ferment them. That way there's some crunch left plus more flavor!

      Every other veggie that I ferment I don't Blanche but it takes a lot longer for corn if you don't blanche.
