    This recipe is solid! I love Alebrijes too, the owners are awesome! As a coffee connoisseur there are two things I recommend. 1 once it reaches a boil turn off heat and wait one minute to add coffee (water that hot makes the coffee bitter; ideal temp is between 195°F and 205°F). And 2: grind the coffee coarse (sea salt like) because the coffee is less likely to slip through the filter. But more importantly, coarse coffee slows down the extraction process which can result in a richer, bolder flavor.

    My Grammita was born in Puerto De Luna, NM. She met my grandfather when she was very young they married and moved to the East Coast due to him working on the railroad, then eventually settled in California. I grew up with my Grammita and my Mom always had an "Olla" on the stove I remember cooking our beans in it.😋

I have such an appreciation for how things were done back in the day. Our parents and grandparents sacrificed so much in order to give us more. But nothing is more valuable than those sweet memories. ❤

    I haven't had this type of coffee much, but the few times I did it's amazing! I wonder if it will ever become popular, like a fad, among the US. When we lived in Mexico we mostly drank powdered Nescafe. I'm not a big coffee drinker because it makes me jittery, but i love the smell. We did have a coffee maker, so sometimes we'd get local coffee grounds, but I didn't like it much. Back here in San Diego, we mostly just made coffee in the coffee pot/maker, but lately my husband has been getting fancy. He got a different pot, I think an Italian press? and a bean grinder, and wow, it sure is a difference! He loves cafe de olla, so I'll have to show him this and hopefully he'll make it!

      I have to be careful with my caffeine consumption, too. My eyes start to twitch when I drink too much, and I know immediately to cut it. Like you, I just love the smell. Something about it is so cozy.
      How nice that your husband has an Italian press. I can imagine how wonderful that coffee would be.☕️👌🏼 You’ll have to let me know if he makes café de olla. The recipe I shared is definitely on the sweeter side, so he may want to start with a little less piloncillo, taste and then go from there.

    I just finished making this using your recipe and it’s AMAZING! My preference I’ll cut back on the sweetness for next time but good grief! This is THE best thing ever!!!

    I love these clay pots. They give whatever you cook a different unique taste. This coffee looks so delicious. Really wish I knew of a reliable lead free clay shop.

      Yea. You really do have to be careful about that. And you need to cure it. One of these days I’ll try to shoot a video about where you can find them and how to treat them.

      We had one for water, in Mexico, that stayed on the dining table. It had a cup to cover the opening. (I doubt it was lead free, I don't think they pay attention to that down there. (Then again, I don't know if it had lead, either.)) Anyway, it was really nice. I didn't know they made cafe de olla in this type of pot, I think I've just seen people use regular pots, like those blue enamel type pots.

    Sometimes I wish I drank coffee when I see cool recipes like this! But alias... I just can't stomach it! Funny I like coffee flavored things but not the coffee itself, no matter how I doctor it up, no can do!! I loved your little Olla and the video was shot beautiful as always! Great job!

      Really? I'm sure you're better off not drinking coffee, health-wise, but I don't know how you can resist, especially when the smell lures you.     What a beautiful presentation. I always thought cafe' del Hoya was way more complicated. I need to make some. Nice to see your husband. Maybe he can cook with you in the future. I can smell the coffee from here.

    This looks so delicious, because I enjoy iced coffee all summer. I had never heard of piloncillo, and had to look it up. I'm obviously not from the southwest!

      I always tell people it’s just sugar in it’s purest form and tastes sort of like brown sugar. We use it in many Mexican desserts. I hope you’re able to find it where you live. I’m pretty sure it can be ordered on Amazon. Thanks so much for watching. 😊

    I had it at Del taco they have just iced coffee ☕️ this is their iced coffee tbis one when I tasted it I was like this very different I thought it was just a sweet coffee iced w just regular sugar or liquid omg I got it for FREE if I spent $1 at sel taco and when I read up on it I was like wow tbis special

    What is piloncillo? I have never heard of it living in Colorado. But likewise maybe I should ckeck out one of our fine little Mexican groceries and that would answer my question! Thank you!

      Piloncillo is cane sugar in it's purest form, unrefined. It tastes similar to brown sugar. I'm sure you can find it in any Mexican grocery store because it is used in so many desserts. It's mostly sold in cones, which you can shave with a knife if you're just using a little bit. Or it's dissolved in hot water, as you saw in this video. I think it's delicious, but I really have a sweet tooth. Thanks so much for watching!

      @@marcyinspired1442ohhh ok I get it I that it was mixed w something else and yes pure sugar cane the juice is light brown when we drink back home in asia so for it to look like that makes sense I love the shape of the cone I seen thick slices but the cone is perfect

    Café de Olla, for two cups
    2 cups of water
    1 Tbsp. Raw Sugar
    1 cinnamon stick
    1 clove
    1 star anise
    1 Tbsp. of ground coffee (not instant)
    Do you see any issues with this?

    Que mal pronuncias la palabra OLLA…the LL is not pronounced as a Y.. I understand Spanish might not be your primary language, but please, si hablas español, por favor trata de pronunciar la doble LL y la i griega Y, correctamente..

    Tampoco lleva tanta canela. Se le pone menos piloncillo, si no es jarabe 🤦
