PS I know allspice is a stand-in for ginger but I like the heat of ginger, I've seen recipes that use allspice but they added black pepper for a small amount of heat.

The neat trick to part baking the dough then scribing on the detail prior to completing the baking is, for me, simply genius. If I start practicing recreating this triumph in gingerbread now then I may have perfected it by Xmas 2020.
Bruno did you think about acting because not only are you an exceptionally talented chef but also an extremely funny communicator that makes you want to listen and see what it going to look like. Just wish I could taste be in heaven
I used the recipe for the cookie and the baking technique to make houses of my own design. It came out well, but I made several at the same time and waited a few days between decorating and assembling, the cookie softened up a bit. It was no problem for solid parts, but I made some windows and had to be very careful not to break them. I would recommend finishing the house within 2 days and working storing it in a room without much humidity. Other than that - it worked really well! I made gingerbread structures for the first time last year and Bruno’s cookie was a lot easier to work with.
