That looks so delicious. We call this Chilaquiles and we call Capirotada, Migas. I don't know why, but that's how my mom was raised and how she raised us. Mom makes them like you did but without onion and she adds her homemade enchilada sauce. I scramble the egg and once they are almost done I crush in bagged tortilla chips with lots of pepper and cheese. But you are right...no matter how you make them or top them, they are delicious!
This is my favorite as a kid, and now at 59yrs old I’m making it for my grandsons and they love it!! Another way to make kids try it is to put hotdogs in it.🥰🥰 sometimes it’s the simple things that we love and cherish and this is definitely one of them!❤🌹🌷💐

Yeah, my Mom makes scrambled eggs like that too. I make Quiche' almost every week for my breakfast, the Milk fat and the water in the milk heat up and create millions of Bubbles, that's what makes the eggs fluffy ( and my Quiche' puff up and rise ). Have you ever made "old School" Hot Chocolate, where you heat Milk in a pot and then add the Powdered Chocolate...if you walk away from the milk as it's cooking it will get really hot and boil with BILLIONS of bubbles rising up and overflowing onto the stove and into the burner pan which it will stick to and burn, that and just a little longer and the milk residue will burn to the bottom of your pot and create a unique smell and a real challenge to remove. I'm so glad the made the just add hot water to Hot Chocolate mix
My mom makes these the exact same way and it's my favorite comfort food when I go home, we usually do a green sauce with it and now my kids love it too

It's an avocado slicer. They're really great. I've been using them for years. I have several. That particular one in this video has a knife on one end, and a thing in the middle to remove the pit. But I usually just use it to get those perfectly even slices.🥑

Believe it or not, I have several avocado slicers. That one is just my favorite because my sister-in-law gave it to me years ago. You can find them anywhere these days; the grocery store, Walmart, Amazon.... I love them because they always give me those perfect slices. 🥑
I never knew what Migas meant. I have eaten them since I was little. How fitting that it means crumbs. Usually, we ate that when all the bread was gone. Now we use the bottom crumbs of the tortilla chips bags. Unless someone eats them. Lol I have mine today in solidarity.

They're very similar. The only difference is chilaquiles are completely covered in a chile sauce, while migas are smothered in scrambled eggs. I would eat either one any day, any time! Thanks for watching. I'm ready for green corn tamales, now!
My 1st husband used to make this! It's ok, but I like Chorizo n eggs, with very, thinly sliced tomatoes with my flour tortillas! It's better than salsa! Js!❤ Yummy! 🍅🥚🌶️
I'll have to shoot that at some point in the future. It's very similar to how I cook beans in my crockpot. The only difference is you cook them in a large clay pot with a little onion and garlic.
I saw a recipe that dried the corn tortilla pieces overnight, then they were fried and added to the eggs, onion and jalapenos, It left the pieces crisper.
I just tear up the Tortillas and stir in about 1T spoon of oil and add some Salsa to the skillet after the Tortillas have been in stirred around in the oil, crack a few eggs right into the skillet, stir around with a Silicone Spatula, shake in some salt and add a handful or two of cheese and just keep mashing and folding until cooked. 1 Pan and 1 Spatula to clean and about 7 minutes to cook, even Toast takes longer, you have set out the butter so it'll spread, move the toaster over to the plug, toast the bread/Bagel just right, butter and eat...then when the toaster cools you can move it to where you keep it.
migas and chillaquiles are the same to me ... What you call migas my family calls that dish chillaquiles and my grandmothers are from Sonora and Michoacan

Yes, they're very similar. Just swap the eggs for the chile sauce and you've got migas. (Although, I usually top my chilaquiles with a fried egg.)
