I have a question about the colour of the oil. When we look at Korean fried chickens, the cooking oil is always light coloured(very fresh and 'new') But the oil here is pretty brown, I hope it's not oil that are reused quite often... Thx
the brown redish is Annatto Oil. it is used to give that color to make food look better. but then again reuse oil has always been a way for street food vendors and these kind of food shop in asia countries to save on cost. high end restaurant wont reuse oil
Because Korean always good at pretending clean infront of a camera. Bts, Korean process is similar like any other Asian country. No glove, no mask, dirty oil, etc.

This is not Korean chickens. This is Thai Fried duck, which is similar with Peking duck. I speculate the red oil is chilli oil sauce.

My endocrine system is pretty solid but not sure I want to eat deep fried Saran wrap with my duck skin... super interesting though.
