I like the perfection of japanese cursine. And with all respect I'm gonna give this video a like. But I have to say after the cut under the wings at 2:35 the chef is pouring the brouth into the ducks body at 2:50. => and in the following you can see that it's gonna drip out of the hole below that is fixed with the steal needle. So I don't understand the sense of this procedure. Would it not be more convenient if the filling is gonna soaked with the broth? - Instead of this pouring process? I don't understand the step of this technic accoring to the "dripping out" broth. I don't get it if the liquid is running out anyways.Thumps up for the video, and if you "Travel Thirsty" or someone else have an idea why the chef is doing this then please let me know. Internal flavoring and to keep the duck from charring. It also helps with keeping constant moisture so that the ducks will always be plump and juicy. Real simple.
(1) what does he put inside the duck, is it salt of seasoning? (2) what temp is it cooked at, and can it be cooked in a standard oven? (3) what are the little black dumplings made from?
