- We will show you how to make Kanpyo Sushi Roll (かんぴょう巻き). Kanpyo (Kampyo) are strips of dried gourd, and they are cooked in a sweet and salty sauce until very tender. The sweet taste and somewhat squishy texture of cooked Kanpyo matches very well with tangy Sushi rice. This sushi is perfect if you are vegetarian / vegan or do not like fish.

This is one of my favorite sushi and I have only ever been able to find it served in one restaurant in an area I no longer live in. I have always wanted to try and make it myself at home, but finding the dried kanpyo gourd to purchase anywhere here is so difficult. Do you know of a place I might be able to order it online?

What are best substitute ingredients if one doesn't have or not able to eat nori seaweed ?
I can't eat nori seaweed.
So far, I use (one-side watered) rice paper to make sushi.
Use plastic wrap and remove before cutting. Roll tightly so your roll doesn’t fall apart. Don’t eat the plastic!😊Good luck!
That may actually work ! 🥰 (I’ve always made onigiri with plastic wrap but never made sushi with them.)
