Why not use the whole cumcumber, cut off the ends, slice it in the middle across the length, gut out the moist parts with a spoon and julienne it. More even parts and it will match the length of the nori :) 2. @3:20 is the ramp like distribution of the sushi intentional? Would make sense because I highly doubt the roll would hold otherwise.. 3. I am jealous, you have so many great ingredients! Whish I could get those here. 4. Im getting one of these non-sticky sushi mats!
I appreciate your concern! I've been a sushi chef for many years so that method simply works best for me but for others, it can indeed be dangerous so I recommend using any method that you feel comfortable with!

Cooking does not require to be so strict by recipe. When you cooking you are the master and of course you can add, remove or replace some ingredients.
