💑 About Hercules Candy
Hercules Candy has been on Steve’s side of the family since 1910(ish). When he took over in the 70’s, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesn’t love being on camera and is very elusive) is their oldest daughter. Why do you pull some of the batch but not all of it?
They go back to it. There is a long low flame along the back of the pulling area, behind the slowly moving canvas sling. That keeps it pliable. After she pulls and cuts sections cooling speeds up. The candy still is very hot and pliable when he puts it into the bronze rollers. After that it's cooling fast, just takes a few more minutes to be able to drop the candy so it separates. Interesting to watch isn't it? 😊
the vibration of hitting the hook makes the candy firm on the parts touching the hook, effectively making it no longer sticky and easier to lift off

Longer crank means higher torque. Torque is the force involved in turning something about a pivot. In other words, less effort for the candy maker to turn the roller
Yes but longer cranking distance which wears you down over a lifetime. Candy makers die early.

The washing down the sides of the pot to remove sugar is done to prevent the candy from crystalizing and becoming grainy
I don’t know if it really happens that much when corn syrup is added maybe it is not to tarnish the copper?
@@goodfruitseason You still have to wash it down. I’ve had sugar crystallize on me when I had corn syrup in the mix. I don’t usually see people wiping it down first rather than multiple times throughout the boiling process, so I wonder if they just didn’t show that. What I see more of, though, is keeping a lid loosely on the pot so the condensation wipes it down on its own. Idk if that’s actually any better, but it’s what my friend does and she hasn’t had any problems with it that I know of.
@goodfruit111 Corn syrup helps reduce it, but can't fully eliminate the risk, if there was enough corn syrup to completely prevent crystallization, the candy also wouldn't harden properly at the end.

At first she clearly hits the candy, not the hook. I don't know if it was on purpose or she missed the hook. If the goal was to hit the candy, my theory is the following: the candy seems to be a dilatant fluid (which hardens on fast shearing speed), so a quick strike could make it hard for a moment and it "breaks off" in one piece.
I like this no talking format. Easier to focus on the process.

Silicone spatulas are more easily available, they're great to clean bowls out after baking, just remember to share

Man I really would love to try this candy but the shipping rates are insane. Unless you order 100 dollars worth which is hard because everything I want is out of stock but 20 dollar shipping is crazy for an 8oz bag of candy that costs 10 dollars and I’m only 200 miles from you guys. Not your fault and I know i know that, just sad

You should try making it at home if you feel like it. Search up candy cane recipies and it will give you all the measurements. Im pretty sure all you need is sugar, water, corn syrup, and flavoring of your choice

We actually have it hooked up to our sink and run cold water through it to cool it down as needed

at 4:10 when the candymakers are adding color (or is it color and flavor?), how much has the corn syrup and sugar mixture cooled? How quickly does the mixture cool?
Cranberry candy AND snowman clothing? These are a few of my favorite things!
Why dip the hands in water before scooping the corn syrup? Why not pour the buckets contents in? I know nothing of candy making and am curious.

Possibly, but also if it's really long it provides more leverage so you can crank it with less muscle

How low does the temp have to get before you can start handling it on the table?
Also, how old is that copper kettle? I’m betting it has to be cleaned it by hand?
It's more of a feel for how solid it is. If it's too liquid it just won't work. It's been passed down for generations, it's got to be at least 100 years old. And yes it does, hot water gets majority of it all off though very easily.
The brand of flavoring you guys use is the same I used before. I find its flavor to be extremely week. I typically add it in after turning the heat off when it cools to 300. Even when adding 2 drama to a 1lb Bach it still has only a subtle flavor. Do I need to use more? Change the temp when I add it?

It's said there that adding air makes it lighter. Perhaps they do this to make the mix less dense and equalize its temperature from the inside out because the outer layer gets cold very easily while the inside of it is still hot that when they process it, the inside might leak out

The wash is to get rid of any sugar that may have transferred whilst the candy was in the pot. It’s washed before wiped with the water and brush during and washed again after.
