▶Ingredients:
Red Velvet Sponge
Pan size: 7” (18cm)
4 large egg yolks
41g (3 tbsp.) vegetable oil
60g (1/4 cup) milk
1/2 tsp. red food gel
10g (2 tsp.) vanilla
50g (1/3 cup + 2-1/2 tsp.) all purpose flour
10g (1-1/3 tbsp.) cornstarch
18g (3 tbsp.) cocoa powder
4 large egg whites
3g (1/2 tsp.) white vinegar
85g (1/4 cup + 2 tbsp.) sugar
Bake 300F 60-70 minutes in a waterbath, or until toothpick comes out clean.
Vanilla Whipped Cream:
400g (1-2/3 cup) whipping cream
40g (1/3 cup) icing sugar
10g (2 tsp.) vanilla
Oreo Cream Filling
3 oreo cookies, crushed
3/4 cup vanilla whipped cream
7 oreo cookies, whole
Green Cream
remaining vanilla whipped cream
green colour gel
Garnish:
oreos, quartered
rosemary
pearl sprinkles
icing sugar
