    Peach and Chile Paloma
    1.75 oz Mezcal
    .25 oz Aperol
    LaCroix Apricot sparkling water
    Sliced peach
    Tajin seasoning
    .25 oz fresh lime juice
    Agave Nectar
    Directions:
    1. Slice peach into strips and toss with Tajin
    2. Prepare Collins glass with Tajin-infused Salt on Rim.
    3. Muddle a few peaches with a ¼ oz agave nectar.
    4. Add in Mezcal, Aperol, lime juice.
    5. Shake Quickly
    6. Pour in 3 oz La Croix Apricot. Swirl to mix.
    7. Pour into glass.
    8. Garnish with additional peach slices.
    "The Greatest Margarita"
    1 1/2 oz Good Tequila
    3/4 oz Grand Marnier or similar
    1 oz lime juice
    3/4 oz tangerine juice
    1/2 oz ginger simple syrup
    Fresh thyme
    Burgundy Wine Glass or Snifter
    Directions:
    1) Salt side of glass.
    2) Smack a long stem of thyme between hands and place in glass.
    3) combine tequila, grand marnier, citrus, agave and ice.
    4) Shake well and double strain into the glass either for straight up or add a few large ice cubes.
    5) Drink.
