ASMR: Fast Precise Cutting Skills and Extremely Sharp Knife

  • (ASMR Cutting vegetable video) This is by far, one of the sharpest carbon steel knives made in Japan specifically for Master Sushi Chef Hiroyuki Terada's requirements. He wanted an extremely sharp knife, and a blade that would keep sharp for longer periods of time compared to other stainless steel knives. When he searched Japan for the optimum knife smith in Japan, he also wanted to find the factories that are not mass producing these knives since quality has been the issue in the past. He wanted craftspersons to produce his knife and with the assistance of Knife Merchant, he was able to, together, source this supreme Japanese slicing tool.
    The entire line of Minonokuni offers something for everyone, even if you're not a professional chef. They have 3 different lines of knives nd you can choose which level you wish to own. Chef Hiro has been asked many times what knife is best for home use. Since there is a difference in price between each level, the end result is not important since these knives will last a life time; taking that into consideration, the cost of ownership over many years is negated by what they will cost you.

    About Master Sushi Chef Hiroyuki Terada:
    Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on RUclips.
    At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992.     I've been watching your videos since I watched your first fast precise cutting skills video 5 years ago. I now work in a kitchen on Saturdays just because I wanted a taste of the Hiro life. Any time I'm breaking down anything with a knife, I subconsciously think to myself, "How would Hiro do it?"

      Less dangerous to cut yourself with a sharp knife than a jagged or blunt knife at least. A lot easier to heal and less likely to leave a scar.

      if you watch as Hiro cuts with the knife, you can see how the tips of his fingers are pointed inward so that the side of the blade is only ever touching his knuckles

    I generally use heel of knife to cut unless it is for minute details work.
    Enjoyed how he is using the tip throughout the video; no trash talk and bullshit, only demonstrated skills

    This is fantastic guys, I've been a fan for a long time now, and I really hope all the new people seeing this video go and watch the older videos. The camera guy and Hiro both have a really nice personality and have a professional attitude towards the production of their meals but still manage to keep it fun with some great video ideas. I recommend this channel 11/10 in every way (even if you don't like fish as there are still plenty of videos to entertain you)

    Just got off work, working the dinner shift, back of house of course.
    Got home, washed, dried, and did some touch up maintenance on both of the knives I used tonight.
    Took a shower, got dressed then into bed, and couldn't fall asleep. Kept thinking about working the line and all the little things that happened before, during, and after dinner service.
    Then I watched this, and all those thoughts stopped and now my mind is at peace for tonight.

    That's a pretty thin yanagi. Traditionalists would say that veg prep should be done with an usuba or kiritsuke for traditional Japanese style blades. I would prefer my kiritsuke over a yanagi for veg prep but Chef Hiro seems most comfortable with a yanagi-ba.
