    Sources: FDA food code 3-402.11: www.fda.gov/media/164194/down... This covers exempt fish including certain species of tuna including yellowfin. While it is safe in regards to parasites, as with all other raw foods there is always risk of bacterial spoilage

      Will do! Those are best suited for rolls and poke, but if it's thick enough (and I hope to find one), it can be sliced for nigiri

      @@photogami I found steaks from costco freezer section that are about 1 to 1.5in. Not sure of it is thick enough but I wanted to try to turn it into Tataki, I just dont know which direction to slice :(

    Great Video, here in Germany I sometimes buy Tuna at Metro Wholesale as they offer fresh fish. I am wondering how your vacuum sealed frozen tuna will look like when you thaw it. Mine always lost color pretty fast. Please let us have a video about that too! :)

    Wait... didn't the part about the process for freezing/parasite safety say that the paragraph shown specifically doesn't apply to Yellowfin Tuna (the type used in the video)?

    i cant finda tuna anymore at costco other than canned tuna they used to have tuna all the time.

    Was this previously frozen? So you can refreeze it? Ours is marked previously frozen and only steaks. I may ask them to leave me a loin and see if they will.

      Yes it came in frozen per the label, I do refreeze (usually a big no no)
      The steaks are great for poke and sashimi, and if it's thick enough you can make nigiri too. If you ask them for a loin, ask them for a center cut! The tail end I used here gets tapered at the end and has lots of sinew that requires breakdown

    I ate too much, the whole thing, and had a serious system flush. A flush is good once in a while. My mistake.
