Your use of green and sustainable methods to remove rust from cast iron is commendable. But it was a lot of work and only the smallest piece was addressed. I would recommend using a 50%-50% vinegar water solution to soak the larger rusty pieces. Also, try cutting the potato crosswise rather than lengthwise as the potato is much easier to work with that way and using coarse kosher salt rather than table salt and a stiff wire brush to scrub.
