    This is the first time I have heard of roughing up the potatoes- great tip! I don't generally like to peel my spuds, but I tried this out your way, and they were spectacular. Having said that, I do like every single potato dish that has ever been invented by man- so... slight potato lover bias! lol.

    This is a sensational tutorial on How To Roast The best Potatoes Of Your Life!!! The big confusion for me has always been about WHICH type of spud to use for roasting etc but this video has answered that question. Awesome cooking Chef next time I do some roast potatoes I'll be using this method for sure!!!!

    I was looking for instructions on a roast (the internet seems split between crank it to 500, let it get to a certain temperature, then turn the oven off, OR roast it at a low temperature for a long time and THEN crank up the heat, and anyway, whilst seeking clarification on the best method, I stumbled across these potatoes, which ought to go /swimmingly/ with said roast.

    Those spuds look delish. I think I know how I'll modify the basket in my air fryer/griller to accommodate the fat. I don't have any duck fat but will use ghee instead. Great video Chef James.

    Excellent video as usual.
    Just wondering if, like me, you add a little baking powder to the water when parboiling to help break down the outer layer of the potatoes.
    I believe I heard this from Kenji Alt Lopez but can't really remember.

      You can also impart a flavor doing that or you could just rough the potatoes up after you parboil

    There are so many ways to cook potatoes. I've never seen this one. They look deep fried (the American way). You have a very calming way about you. Are you sure you are a chef?

      Of course you are a chef, but I'm picturing Gordon Ramsey screaming at you. I was a waiter for a few months in college. The chef was a grade-A asshole. You need a show on the Food Network with Ina Garten and Giada De Laurentiis. I'm having a man crush on you.

    How do you sharpen a pair of kitchen scissors ? Do you use a steel or a sharpening block ? I have a pair of shears that must be over 80 years old and they have started to lose their edge.

      When they start to need sharpening you can take them apart and use them on the stone

    I will definitely be trying these with duck fat myself, but what would you recommmend for a vegetarian substitute? Butter? Extra Virgin? Sunflower? Ghee? I've mostly used coconut oil when roasting for vegetarians, but keen to hear your professional opinion.

    If you are using goose or duck fat should I melt it so it can be added to the par boiled potatoes?

      it will melt if you toss them with in while they are still hot

    Pealing potatoes in the sink is fine, but do not expect the average garbage disposal to process them. Put the strainer in the drain and gather them up for compost.
