I was looking for instructions on a roast (the internet seems split between crank it to 500, let it get to a certain temperature, then turn the oven off, OR roast it at a low temperature for a long time and THEN crank up the heat, and anyway, whilst seeking clarification on the best method, I stumbled across these potatoes, which ought to go /swimmingly/ with said roast.
Those spuds look delish. I think I know how I'll modify the basket in my air fryer/griller to accommodate the fat. I don't have any duck fat but will use ghee instead. Great video Chef James.

There are so many ways to cook potatoes. I've never seen this one. They look deep fried (the American way). You have a very calming way about you. Are you sure you are a chef?

How do you sharpen a pair of kitchen scissors ? Do you use a steel or a sharpening block ? I have a pair of shears that must be over 80 years old and they have started to lose their edge.
I will definitely be trying these with duck fat myself, but what would you recommmend for a vegetarian substitute? Butter? Extra Virgin? Sunflower? Ghee? I've mostly used coconut oil when roasting for vegetarians, but keen to hear your professional opinion.
Pealing potatoes in the sink is fine, but do not expect the average garbage disposal to process them. Put the strainer in the drain and gather them up for compost.

When they start to need sharpening you can take them apart and use them on the stone
Use a sheet pan instead of plastic to reduce plastic waste.
