- How to make curry powder at home
Curry Powder is a mixture of spices. It is not a staple ingredient in Indian cooking and is not used in traditional Indian cooking. It is rather an invention of the British to make one single fragrant blend of spice powder instead of adding each spice powder separately. For Indian cooking each household has their own recipe for adding spices. Some curries may just have coriander powder others may just have cumin powder or may be both or a curry may need an addition of coriander, cumin and fennel, the options are endless. I rely on curry powders if I am cooking something very quick and it is indeed very convenient when you want to jazz up a delicious dish in less time.I always make my spice powders at home. They smell divine and much better than those store bought ones which have a very mild smell. Use it in any vegetarian , non vegetarian, vegan or lentil recipes. It is an all purpose spice powder .

Ingredients for making curry powder -
* Whole coriander seeds(dhania) - 1/2 cup / 50 gm / 1.7 oz
* Whole Cumin seeds(jeera) - 4 tablespoons
* Fennel Seeds (saunf) - 2 tablespoons
* Yellow or brown whole mustard seeds - 2 teaspoons
* Fenugreek seeds (methi) - 2 teaspoons. Fenugreek seeds are bitter in taste so do not be tempted to add too much
* Cloves - 10 to 12
* Curry leaves - 10 number (totally optional)
* turmeric powder (haldi) - 1 tablespoon
* You can even add 4 to 5 dry red chillies to the above list or a tablespoon of paprika or 2 teaspoons of red chili powder . I like adding chili powder separately to my curries while cooking so that I can have control over the heat level, hence I do not like adding any chillies to my curry powder. You can even add a teaspoon of black peppercorns. The choice is all yours.
Except the turmeric powder, toast all the whole spices in a heavy bottomed pan over very low heat. Remember to keep the heat very low and stir them constantly until you can get this beautiful aroma of the spices. Stir till they are just a shade dark in color (not much as they will turn bitter).You just need to toast them to bring out their aromatic oils and to get rid of any moisture that may be in the seeds. Take them off heat and immediately transfer them to a plate. Let it cool down completely. If you do not cool them completely then they will turn cakey and form lumps while grinding. Grind them in a spice or coffee grinder to a fine powder. Take out in a bowl and mix the turmeric powder very well. Again leave it for sometime so that if it had got heated due to grinding it can cool down completely. Store it in an airtight jar. It stays well in a cool dark cupboard for 2 to 3 months but if you store it in the refrigerator it stays fresh for even a year. I always make a large batch and stick it in the fridge.
Tip - If you are into Indian cooking keep a designated small jar for each spice powder and keep it in your spice cabinet for regular use. Keep the bulk spice powders in the fridge. Refill your small jars . Immediately keep your bulk jar back in the fridge after refilling your small jar as condensation will lead to moisture and moisture is an enemy of spice powders.

THANK YOU! I found a good organic but tasty curry powder from a market that I use sometimes when I run out of other spices, but YOUR curry powder recipe looks SUPER DELICIOUS! I have to buy mustard seeds, fennel, fenugreek and more coriander seeds to make this, but I'll definitely do that in February! I'm excited to try this recipe!!
I can’t wait to try this! Instead of storing my bulk whole and ground spices in the fridge (just don’t have the space), I use a food saver to vacuum seal them, and store them in my cool dark basement, and they last for a very long time - cumin still smells strong 2 years later. This way I avoid two things that degrade the spices: oxygen and light. Just my tip.

I use this curry powder when I'm cooking for people who can't handle spicy food, but when my Mexican friends come over, I add garam masala and kashmiri chilli powder. It just adds another dimension and flavors to the dish.

Thanks @Bumbi! From your recipes there is only a little overlap with Garam Masala, how would the use differ between those 2? For example, is it curry powder typically used at the beginning, garam at the end. (depending on the recipe off course).
Garam masala is made with very aromatic warm spices such as cinnamon, cloves, green cardamoms, mace, nutmeg. If added earlier in the recipe along with other spice powders, it looses its flavor in the long cooking process, so garam masala is added a little later in cooking to retain its aroma and flavor.

I don’t add chilli powder to my curry powder but add it separately. In that way we have full control over the amount of heat.

Hi, I don’t know whether you observed or not a curry plant in the video. I have small curry plant growing in my pot. I bring it inside my home during winter months 😀. Huh. I absolutely love curry but I didn't know that it was made with so many different seeds. I always just kind of assumed there was a curry root or something that was ground down to make the powder like ginger root, horseradish, or wasabi 😅

Yes Farida if you use this curry powder then no need adding any other spices to your curry. I sometimes add a little more of turmeric powder. Like if you are cooking 1 kg of chicken then use a heaped tablespoon of this curry powder.

Hi Bumbi 👋 I have quite a bit of curry powder and chilli powder that I suspect is starting to get quite old but I don't want to throw it out do you have any suggestions to use it up quick? I was thinking maybe some spiced oil
Chilli powder has a huge shelf life. Are you sure it’s getting rancid? Use up the curry powder in any curries. Like instead of adding cumin, coriander separately just add curry powder only. You can add it while frying potatoes, soups, stews. Just use it up in your regular cooking. Hope you store curry powder in an airtight jar in the refrigerator.

Bumbi, I have made this fine curry powder but find that you never call for it in your recipes, at least the ones that I have seen. Is it meant to be added in small amounts in addition to the other spices you call for? Or how best to use it. Many thanks in advance for your help! And many thanks for your fine recipes.
You can use it in any curry. When using curry powder you do not need to add other spice powders like coriander or cumin powder. Just add it in combination with turmeric powder and you are good to go.

Hello Bumbi! Thanks a lot for this recipe! I have a question for you, every time i make homemade curry powder, even thought i follow the proportions, it ends up smelling way too floral, too intense, and i end up with something tasting like roasted coriander seeds. I never recognize that common curry powder smell. Am i missing something?
Maybe lessen the quantity of coriander seeds. You can add more of curry leaves and use a little more of fenugreek seeds but please keep in mind that fenugreek seeds are bitter so adding too much will make the curry powder bitter.

@davidstarks2456 I like using whole spices in combination to masala powders as that brings in more flavor to the curry.
