  • I'm a full-time guide, mostly up in Tohoku (northeast Japan) but I also guide groups up Mt. Fuji in the pre and post season as well as lead normal tours in places like Kyoto, Nara, and Tokyo when contracted.

    I'm not going to lie, these foraging videos of yours, particularly when there's a stream involved like in this one, are something I really look forward every spring.

    Bacon wrapped stuff exists everywhere. A few of the nearby Asian restaurants to me have bacon wrapped asparagus. One of the more common ones is bacon wrapped scallops. Personally I prefer turkey bacon over pork bacon.

    I just don't know how I'll ever manage to get the timing right. Grmbl...
    On a side note I was wondering about those rubber boots...how do you do that with guests? Is there somewhere where they can borrow them? XD
    At least I got the Onsen and I'll definately go back. I wonder in what century I'm gonna come to Japan in spring though =_= oh man.

    Do you lightly cook the koshiabura first before wrapping them with meat, or are they raw? Looks delicious.

      I just wrap them raw. By the time the meat is cooked, they are too!

    I would love to go on a wild foraging adventure with you. It’s something I’ve always wanted to do and is now firmly on my ever-growing list of things to do in Japan. Things are regularly ticked off that list but it’s a list I don’t ever expect to get through and that’s just the way I like it. It’s nice to dream and have things to look forward to.     Those koshiabura meat rolls look like they could greatly benefit from just a touch of garlic butter compound during frying(or just butter and a bit of garlic powder on top of it in a pan).
    Just a little bit though, mixed with vegetable oil, as otherwise you'll lose the sansai freshness.
    Damn. Gotta try some myself someday =_=

    Always love the foraging vids on here, the koshiabura wrapped with pork reminds me of wrapping asparagus with prosciutto. One of my family's favorite side dishes for holidays is doing that + a thin slice of Asiago tucked underneath the prosciutto and then a light balsamic glaze drizzled over the final product. Would love to wander around such an area someday, loved seein the beautiful streams :)

    The picking of these unique vegetables seem to be mostly for personal use. But I was wondering if there were some restaurants in the area of Morioka that offer these in small portions net to the regular set meals.
    I would love to go forage for them myself but scheduling it in could be tricky.

      Yes! During the spring, a lot of restaurants offer dishes with foraged greens! It's really common at locally owned places, though not so much at chain stores.

    I was watching this whilst cooking my dinner and it made my food look rather disappointingly boring in comparison to the yummy food you all made!! Your nikumaki looked yummy and the tempura looked so nice it made my mouth water. I've had my fingers crossed all spring that you'd made a foraging video this year, as I find them so enjoyable and it was a super treat to see this video appear in my notifications. Something about peacefully wondering through the woods searching out for delicious things to eat is so pleasing to watch - and even more so to do I imagine. Thanks for taking us a long with you.
