For the summer kitchen put 4x4 slider windows in. Best thing we did for our screen house. You can close them if it rain or the wind blows. Stop by to see it.
Dang the South side looks awesome, great craftsmanship for sure on that side specifically. If that is the pocket door frame that Menards sells, I have the same one in my downstairs bathroom. It is garbage. If you have the means, spring for a better one.

We lived mortgage free but it ment living like you are living for many years. I always said I could never clean without building at the same time. I have sheet rock and paint now but still don't have molding around doors. We adapted and raised two boys in a unique home. We lived the first three months with no running water except the toilet. It took 8 years to get a bathroom sink. Than we built the up stairs and had to start all over again. You guys got this just take a deep breath.

Yeah it does....I think you have done a great job setting up your home as it is! You can do this! Warmer temps are on the way and then man you gotta bust a move! Wish I could say we would come and help but that an't happening anymore. Enjoy the spring I know we sure are; MN is a great place to live :)
