- My quest to mastering hand pulled noodles continues. We are cooking Uyghur food and the traditional dish "Lagman", which is a hand pulled noodle style of it's own. Julian from Let's Cook joins me for the ride!

Why is this channel so small? This man puts so much effort in his vids, give him some love.
You should have seen it a year ago. Just as much effort on the videos, and less than a tenth of the subscribers. He's exploded like crazy over the last few months though. I've no doubt he'll be a multi-million subscriber channel one day.

Just expecting the stories like „I was s subscriber since 8k subs on Andong“ after a half of a year or more. The video quality is high as always. Seems like author likes his job. That’s how most of a cooking channels must look like))))

Andong is basically a more chilled, easy going german version of Gordon Ramsey. He is a man with the passion and skills who is willing to share his knowledge with the world, a cook who we can all relate to.

Lagman, Ramen, Lamian. All words came from the same Chinese word 拉面 meaning "Stretched Noodles". That's why they all sound so similar.

I made this -- I put too much vinegar in the Lagman, but otherwise it all worked. I can't believe that I actually pulled the noodles.
They weren't beautiful or anything, but they were so fresh tasting and bouncy!
I think that these noodles would taste very well with .... .STROGANOFF!

Man, what an adventure!! I was holding my breath for half of the video... "Will they make it??" Kudos, they look really good! I'm looking forward to the next instalment. And I have to say I related way too much to the "carrying the stew on the street" part... I once carried a whole pot of soup to my friend's place on the U-Bahn and no one even blinked. Wonderful real uyghur lagman maked. I am a uyghur from Turkey
I've used that technique and it's a good simple technique compared to the traditional method. I find it helps to use twist and pull kneading technique for about 20-25min. Roll it out to about 1/2 inch diameter, fold in half, twist and knead. Repeat it a dozen times.

Inzwischen meine zwei Top-Koch-RUclipssendungen: AlmazanKitchen für die Outdoorexperience und deiner für Urbanversion!!
Ich mache Lagman immer mit Rettich, Kartoffeln, manchmal Aubergine, Paprika, Möhren, Tomatenmark und Fleisch. Keine besonderen Gewürze. Pfeffer, Salz, etwas Essig und beim Servieren n Tropfen Zitrone. Dann die richtigen Nudeln dazu ❤️ vor kurzer Zeit erst gehabt, aber es ist einfach zu lecker und jetzt möchte ich schon wieder

Any good Uyghur restaurants in Berlin. I tried it in Shanghai, some of the best food on my whole trip to China.
Hey Andong ! I'm really new to your channel but I wanted to comment on this video because I'm actually Uyghur and this is my favorite dish ! I could give you some tips on how to improve your noodles and espacially the stretching part. I hope you see this comment eventhough it's a little late

Personally, I think the key is resting the noodle several times at each stage. Especially after it’s oiled.

i am a bit late but I think I know why you were having issues, the more you pull the less stress is put on each noodle individually and the easier it is to stretch them without breaking them. by not going whole hog you made it harder on your self

Can these be used for spaghetti or are the noodles too different from pasta?
I get the sense the twisting technique is a bit more efficient.

反正我这买不到标了高筋和低筋的面粉。

Worth pointing out but "Lagman" is exactly the same name as La Mian, 拉面. Just an alternate romanization based on the local dialect.
Uyghur is not a dialect but its own language. While lagman is probably a loan word from lamian, as you said, its not exactly clear - especially because lagman in Chinese is 拉条子 :)
What would you use for the dough if let's say... You were vegan? Do you think the salty water along would do?
Hey, könntest du mal zeigen wie du eine Ramenbrühe machst, die man eine Weile aufbewahren kann? Bei mir ist es nämlich so dass ich oft Lust auf Ramen hab, aber ich hab nicht die zeit jedes mal eine Soße/Brühe zu machen. Und um ehrlich zu sein hab ich auch nicht soo viel Ahnung 😂🙈
