  • Hand Pulled Noodles: How To Make Classic Uyghur Lagman From Scratch | Beef Edition Laghman
    recipe:
    all purpose flour 250gr
    two pinches of salt
    water 110ml
    sauce:
    beef 237gr
    sunflower/corn oil 110ml
    onion 1x
    long green paprika 3x
    sweet red paprika 1/2
    tomato 2x, 218 gr
    ginger powder 1/2 tsp
    ground szichuan pepper 1 tsp
    salt 1tsp
    soy sauce 1tbsp
    water 110ml

    Thank you so much for sharing your recipe, a great video, amazing dish. My parents are Russian but were born in China and were highly influenced by Uyghur cooking. Lagmen is pure comfort food to me. Love from Australia ❤🇦🇺

    Thank you so much for making these Uyghur food videos. I love Uyghur food! I almost cried when I saw these. This food is so soulful, so tasty, and full of memories. I was able to visit Kashi 10 years ago and to this day, the noodles and bread are favorites. Thank you so much for doing your channel! Also I really like Uyghur people. I will definitely watch your channel more!

    Made these noodles already two days in a row, because it worked so well😁 once for myself with your delicious sauce and one time with friends in an italian style, tomato sauce and cheese. Worked well too. So fun making these noodles and love the fact that it's quite unknown and special here. Thx from Germany 😊

    Thank you sweet lady. I love lagman. My most fav dish since I was a kid. I will try your recipe of noodles today. I saw someo else’s last year where they used egg in the dough , my noodles didn’t come out so good by that recipe.

    You are amazing. Now i live far from my family and crave for lagman so much but couldn’t dare try to do before. My family and also some restaurants add celery stalk to the vegetables and it gives an amazing unique flavour and smell. 👍🏻

    Not only is this adorable, but it is all described and demonstrated very well. I will try it (meatless since I'm vegetarian) as I love all homemade noodles (even though I will probably screw it up).

    Love Uighur food~~the reason for the water is because you want to have the water as hot as possible but at the same time not make the dough soggy and break the texture of the dough~~rooting for u guys~~keep up the great work~~

    We say Serrano pepper in the United States so we use the Spanish word for it… at least here in Texas we do so… but they are usually the smaller ones

      It will help the noodles get thinner easily , we , Uyghurs have a saying that as thin as hair( head hair )or string to discribe the noodles which means the best ...😋

    In the video at the very beginning before you make the dough you say you have 130 mL of cold water. But then in the written recipe for the dough it only says 110 mL of water

    I have very poor motor coordination and absolutely cannot follow what you are doing in the last section of making the noodles with wrapping it around your fingers that way. Is it possible to just pull the noodles as one long strand and then cut them into noodles before you boil them?
