I had Laghman at a Uyghur Restaurant in Los Angeles, and it CHANGED MY LIFE. Uyghur food is definitely one of my favorites, and I'm telling all my friends to try it!

Thank YOU soooo much! Your instruction really helped me to make lagman by myself. I took a lagman class from another person but failed there - my noodles all broke in the middle when I stretched them between my hands. I tried again at home but failed - at that time, my lagman was not stretching at all and ended up being very thick. Your recipe worked perfectly and yes, I let the noodles dance in the air before they went into boiling water. Using low gluten flour, that with 5-6 % of protein, seems also very important. Bread or all purpose flour, in my case, did not work.
