    I was expecting a light hearted documentary about noodles but this got really deep real quick. I have so much respect for these people starting from scratch and trying to improve their lives. Good luck

    I've tried this. its so wild, failed and failed multiple times. Couldnt move my hands for days after hahahaha This doc was amazing

    Wow! That was great! Good production, good interviews, a vital topic. That's one of the best documentaries I've ever seen. I want to go to this city now, and would attend this school if I could. Instead of starting a noodle RESTAURANT in America, someone should have these classes, should start a branch of this school, I'm saying. What you see here is not at ALL common in America, I've only actually seen it done once in my whole life!

    Thank you for posting this video. I hesitate to suggest a reality TV show but, a mini-series following the young chef’s apprenticeships, graduation & ultimately landing work in local & faraway restaurants. Should the mainland Chinese filmmakers that produced; “A Bite of China” deliver this “series,” they would discover a new, international audience.

      @KLM 117 You know that many people still can't afford commercial insurance and the national scheme has quite limited coverage, right? Cars showing up everywhere is a pretty recent phenomenon, so many people living in a village are not used to cars coming in their way.

      there is no exact recipe dough, any well developed dough will work

      They never use a strict recipe. It's about feeling when the dough is good. somtimes more water sometimes less. It can depend on the air humidity and temperature. That's why it's difficult to make good noodles. Compare factory made noodles (where they do use a standard recipe) with hand pulled noodles and you can really feel and taste the difference. That's why some noodle shops can become very famous.

    The 36 year old man from Bejing has Marfans syndrome for sure. Especially with his unfortunte retinal detachment. Start a crowdfunding for that guy to make sure his aorta isnt about to explode.

      I remember it should be normal flour you used for bread, the key for this is you should use oil(vegetable oil is the best) to make the dough

      It's a blend of primarily cake flour with some all purpose. Plenty of videos on RUclips here showing how to make

      @@thisissteph9834 I've use bread flour and it's impossible to pull even when using 1% by weight baked baking soda (with pH of 10). I've used cake flour and you can actually pull the dough. So if you know how much sodium bicarbonate to use when using bread flour I would love to hear, because I haven't figured it out. If they are using 11.5% protein content flour I feel chinese wheat flour must be different than Western flour in some way because I can't figure it out
