Great show, the reason it seem so hard is your recipe is not quite right. While you can make hand pulled noodle with pastry flour and baking soda, it will take up so much kneading and the results is not very consistent. There are several videos on RUclips showing how that's made. Noodle shop uses high gluten flour like you started with, salt, and penghui(mainly soda ash and a couple other additives). Hydration rate is between 60-65% depending on the flour. With the right recipe, a bowl of noodle can be made from scratch in 15 minutes, just a bit of kneading and a few minutes of resting. Hope you get some penghui and try it again

Hey nice work! I'm glad my recipe worked for you. I shared my recipe and experience with Tomm Johnson back in 2009 before he posted his videos and he turned me onto using a stand mixer for the kneading step. It's a lot of work and it helps a lot but be warned that it is more than a standard Kitchen-Aid mixer can handle (I've replaced gears on my mixer 4 times now). Some thoughts ten years after posting my recipe: - When I've seen noodles get pulled live, it's in a very warm/humid environment (i.e. tropical asian country) - I suspect some mild fermentation may have an effect on dough texture. The Basic Country Bread recipe In Tartine Bread (Chad Robertson, p45) results in a very stretchy dough at the turning step (see photos on page 54 to get an idea). - Environment makes a huge difference (again, think tropical asia). 5° F difference can make all the difference, and humidity surely plays a part too. I learned this lesson after trying to reproduce Banh Mi bread (like what you get in Vietnam) in California. Drop me an email if you wanna pick my brain some more.

That's pretty standard procedure for doughs. Everything gets measured by weight. Like 10g flour, 1g salt, 3g water. Don't actually follow that ratio, but I think it's a simple enough example.
