    About Master Sushi Chef Hiroyuki Terada:
    Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on RUclips.
    At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

    Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

    And that's why I subscribed to this channel. These fellows get along, and they come up with some real cool ideas... not to mention it must all be delicious... sushi evolution.
    A little gravy on the side for dipping... yup!
    Finer side would ask for Au Jus...
    The mash potatoes -- I cannot buy premade... thats my cross line.

    Totally making this!! I would have taken the torch and toasted the potatoes a bit, Added A1 drops on the side topped with a dab of horseradish....but it still looks amazing!!

    That looks incredible. Such beautifully cooked ribeye, great vegetables and a fantastic mashed potato topping. The fried garlic and the dried onions adds a nice touch. Hope you and your cameraman have a good afternoon and a great week, Chef Hiro.

    Mmmm... just mmm... this is definitely worth trying myself! This is all standard fare for my midwestern US palate so its really just a different presentation.
    I cook my steaks in cast iron so for me I would have deglazed the pan with red wine or bourbon and reduced it for a drizzle over the top. I'd also maybe broil the final rolls to brown the potatoes a bit and warm everything up since most of this food is usually eaten warm anyway. And I don't have a torch to brown stuff with haha.

    Love the roll, you should do a homemade burger roll. Also, I had the same idea with using Au jus to dip it into. I honestly don't know why you guys don't get more views, the videos are great.

    Another comment to add for every steak lover out there take your steak out of the fridge 10 to 15 minutes before you cook it season it however you like it will cook way better however you like

      J H Animals are a renewable resource, and man is a carnivore: Eyes in front, predominant canine teeth, short gut. In modern slaughter houses the cattle do not suffer, but are killed instantly with a captive bolt gun, shot to the skull and brain. Please don't try to sew guilt based on lies to assuage what I perceive as misguided guilt over killing animals.
      P. S. I also hunt. Wild hog, mostly, which tend to decimate crops, so in doing so I'm actually protecting your precious plants.

      Jaylen *Straightoutda80s* Brown Yes. I stand corrected. My point, though, is that man has evolved to hunt and to eat animals (as well as to forage, and eat plants). Eating cattle, buffalo, pigs, poultry, deer, fish, etc. is both part of our nature, AND biologically advantageous to our nutritional requirements. Granted, modern western man may tend to excess in this area, but here I am guided by Confucius: Moderation in all things - *INCLUDING* moderation!

    Great lookin roll, interesting combo. Fresh mashers plz: two med potato, steamed or boiled, add warm cream, table warm euro butter, garlic cloves, green onion. Fresh Mashers so you can control the salt and seasoning:)...Hiro, have you ever added saffron to your rice, just for fun? Great post.

    Would it still be sushi if you used mashed potatoes on the inside to substitute the rice? Hard to roll but that was my first thought when I saw this.

    to make a tiny bit better, could have brushed the top of the mashed potato with butter and applied that torch to it a little. and a tad bit of horse radish inside.

    Amazing dish. My mouth is watering. I was thinking same as you, Chef, that a nice brown gravy or a red wine reduction sauce used very sparingly (maybe just in the final plating) could take the dish to yet another level. Lawrys has an impressive history and legacy that is really worth learning about if you haven't already. When I eat great prime rib, I love creamed horseradish. It would be interesting to serve this roll with some creamed horseradish. Did the mashed potatoes work as you hoped? For some reason I thought you might torch that a bit when you put it on top. Imagine if the potatoes had been pressed through a star-point pastry bag and then torched just to get a light broil on the potatoes. Anyway, this was one of your most ingenious creations. If I know you as well as I think I know you, you will continue to develop and refine this dish. G88D AFTERN88N.

    Would it be possible to use a fork on the mash, rake it up a bit and blowtorch it so there's some crispy bits?
    That might have to be added on top after cutting since blowtorching the ones that's already on the sushi might make the whole roll to be too hot
