Fantastic fusion! Looks delicious. But! ☝️ if I was Hiro I wouldn't let that picanha fat he cut off go to waste! That's like throwing away gold! I would've rendered it down use the steak juices from the sous vide with it. And make a gravy mix with wasabi and soy sauce. Top the steak on the sushi with some gravy and more gravy on the side for dipping. Then the rendered fat I'll mix it with tobiko and the scallions for the garnish. Deeelicous! 🤘👌

not me. I love sushi but sometimes it's just too big to eat in a single bite!
I don't want to make myself uncomfortable and unable to fully enjoy the flavor by stuffing my mouth completely full of food. Maybe it's a Japanese tradition to just go ahead and do that anyway... but I hope the purists can understand why some people would want two normal sized bites instead of one giant mouthful.

I have never seen him do it. I'd really be interested to know why and as well if not washing applies to all red meat, possibly other meats as well?

Absolutely delicious looking roll. Now, I'm not one to ruin the taste of a beautiful cut of meat with an overpowering sauce, but I'd think a very small drizzle or some drops of a homemade sauce using the juices with Worcester sauce as a base would be great on the top of it. Just my opinionated idea though :)

Thanks again guys for being awesome and setting an example for the rest of the country. we do not need hatred, or violence or a damn wall. we need to start acting like adults and learning about other cultures and traditions because in America all cultures have contributed to our nation and our nations collective palate !!!!!

I feel like you should not use the vacuum sealer to the extent that the juices start coming out of the steak. I did that the first two times and it just dries it out completely. Yes the blood and juices are still present in the bag, but its been in a highly compressed vacuum for however long, and the longer it's in there, the drier and less flavorful the meat will be. This is good wagyu so it will likely retain most of that due to the high fat.

It's interesting that depending on the place in the world, eating sushi with your hands is the norm. And in other places it's chopsticks.
