Many martial arts masters are great practitioners but can't teach. This master seems to me to be very knowledgeable and can also teach. Rarely do workshop participants receive such a treat.

Seem to actually be using leverage of rear leg as long lever to forward arm as short lever, with forward knee and hip as pivot.

I feel with the internal and external cues explained and demonstrated this may be attainable. Assuming one has a training partner who gives proper pressure testing with good feedback while avoiding false positives. Thank you for sharing!

0:26 Why was he instructed to drop his head down like that ? Is it like a crutch or something (like a hack) if your bai hui point to neck area is not 'song'
    enough?

Wrong focus. He did not instruct to drop the head.

Is there a muscle that connects the knee and arm? How is this being done? What's the science behind it?
