Took me about an hour to get the crust very well blended in the blender but it tasted delicious (I'm not vegan so I was skeptical about this recipe) like a coconut chocolate crust it was great! Not too sweet but delicious. Now the filling is were I was VERY skeptical. Let me start by saying it blended very well in my blender and I didn't have to do a lot of scraping... I didn't want to try it while it was still liquidy... It smelled funny but I was like aww heck I've came this far might as well keep going! ITS DELICIOUS! So good with the berrys! Thank you!!

I did not have 4 mini tart pans I had a larger 8 inch removable bottom tart pan. The crust was my favorite part. I think a crumb crust in a spring form pan with more filling would be more ideal. However, the crust portion of this recipe was amazing. I did not have soaked almonds. I used blanched almond flour with an additional 2 tbsp spoons of water.
Ha! after I finish scooping coconut oil I always clean the spoon and moisturizer my hands, why waste it? Am I right?!!Awesome recipe. I am definitely trying this one asap. I am trying to covert to a vegan diet, but I love sweets. Luckily, I found Hot for Food!!! This is the first vegan dessert I have made and I have never had vegan cheesecake before...A1!!! Makes it easier to make the change when the food is tasty.
Do you think I can add some cornstarch, make the filling a little thicker and use it in my fruit tart? I have lemon curd as a base and want to put this on top.. but I’m scared it might be a bit too runny. I’m not putting my tart in the freezer since it’s a baked shortbread tart and I’m scared it’ll get too hard
