    Haha banoffee pie was trendy? It's just a kind of traditional English dessert pie. My gran used to make it. Im English so that seems really funny to me for some reason.

    This is probably super dumb to ask you because you are life and know everything about cooking, but I recently learned that you have to use a glass bowl to whip up coconut whip cream (dairy whip cream is the same but... ew gross) anyways you never know! Love you so much Lauren! So happy to have more videos from you! 😘😘😘

      okaaaay glass OR cold metal? I used to use cold stainless steal no prob. I also used to use my vitamix... no prob. Its the cream MAN!

    Lauren - a little research suggests that your coconut milk whip tragedy is due to either an over abundance of stabilizers (waaay to much) in the cans your buying. The other issue could be too much air in the can... a packaging failure from the factory. Select a can that doesn't slosh.... happy whipping.

      well I've always used the same brand without a prob until recently. The cans say the same thing on them. I get them solid in the fridge so the cream and water separates. But when i go to whip the cream it curdles?

    If you don't have pre made coconut whip how do you make a whip with coconut cream, just whip it or do you add anything? You're like the vegan Nigella haha love it :) x

      we have a recipe that I linked in the blog post for this - which is in the description - but I also linked to Minimalist Baker's blog in our blog post too. I seem to be having issues with coconut milk lately, but if you can get trader joe's coconut milk use the thick cream from that. You just have to add vanilla extract and then powdered sugar as it's whipping

    Do you think I could use coconut oil instead of earth balance? Or the crust wouldn't get as firm? We don't have vegan butter in my country :(

    Hi Lauren! I HAVE NO IDEA WHATS GOING ON WITH THE CANNED COCONUT MILK! 😩For the past month, I too have had hiccups with the can of coconut milk that I buy for homemade whip! Ive gone through so many cans and different brands trying to find one that will "whip". The only one that I got an "decent whip" I the brand from "Thai Kitchen", which I generally stay away from because it is not a BPA can. 😪 My favorite canned coconut milk was the brown can from Trader Joe's which is NOW in a light blue can and DOES NOT WHIP!!!! After speaking to one of the workers, he said it's a new recipe. They took out the "carrageenan" and I believe xanthangum in the recipe. I can't wait to try this recipe. To avoid the headache, I will take the same route you did and buy pre-made whip. If anyone recommends any bpa free full fat canned coconut milk that whips, let me know ❤️🤗

      so I use Thai Kitchen all the time, but all of a sudden I had a ton of bad cans :/ I tried writing to them and haven't heard back. ALSO it's always the cream that doesn't have binders or thickeners that whip the best. Thai Kitchen always had guar gum but it didn't seem to matter. It still whipped UP amazingly!

    Is it canned coconut milk from Trader Joe's? I went through a whole slew of them curdling :-( I was bummed multiple times until I discovered that there is a pretty good price for a case of organic coconut milk on Amazon. :-)

      oh man I kept hearing that trader joe's brand was fine! I can't get that in canada though so I haven't tried but I've been telling other people that that brand is ok. I bet it all comes from the same place and someone has done something to it! I don't get what's going ON!!! I used to use thai kitchen and never had a problem until recently

      Yeah, it probably does all come from the same place and theres just a problem with the whole batch or something. I recently got 2 cases from Amazon of Native Forest Unsweetened Organic Coconut Milk Classic NET13.5 FL OZ and each can has been perfect. Maybe they have that brand at stores in Canada?

    Exactly the same thing happened to me when I was making my coconut milk vegan whipped cream. Any other time my coconut milk whipped cream turned out just fine, but one time I was working on it, and it just wouldn’t come out right. I must have wasted like three cans of coconut milk, and every time it was the same result. It was super annoying, because I know I’ve made this whipped cream so many times before with no problem. I still don’t know what was wrong that day.

    Hola Hot For Food! So I just went vegan like 2 months ago, and I don't really feel like I'm missing out especially with your kick ass recipes:D But I do have a request; my favorite omnivorous desert (dessert?) was always Boston Creme Pie.     @hotforfood can I replace tapioca flour with corn starch? Does it basically just thicken the toffee?
    Also any idea what I can replace oats with? I'm allergic :(((. Just a regular flour crust I guess?

    Coconut cream issue: have they changed the fat content? The fridge method only works with higher fat milks. Had the same issue w/ a few brands in the uk. Well vexing. PS you guys give good pie.

    Does the toffee basically have a pudding consistency when it sets? I remember my mom making pudding with bananas in little glass dishes when I was a kid...and now that's all I'm craving! :)

    This looks amazing and I am obsessed with coconut, everything coconut is fine by me..But, non vegan version or "the original" is made with cream that is called dulche de leche which is basically condensed (cow's) milk with some sugar and you can add butter and then cook it about 45 min until it thickens into a brownish cream..Now, you can make dulche de leche with plant based milk and vegan butter ofc but I haven't tried so I don't know how it tastes, depends of what kind of milk you use I guess...

    I made this for tomorrow....it's sitting in the fridge right now! I'm hoping that homemade coconut whip will work....I haven't made any in awhile..... my local store didn't have any So Delicious whip. It looks amazing though, and can't wait to finish it and share it with my mom and family.

    I use Naturescharm coconut whipping cream and their condensed milk. They are coming up big in the vegan world 😋

    I am a pie and a half deep in two days. I did a thicker second pie crust it's a bit more sticky, less crunch. The flavour is the same and it's melting my face!!!!!!!

    Dear Lauren,
    Have been watching your channel over a year now. It is so inspiring and exciting. The reason the coconut milk is not whipped maybe because the whisk pot has oil in there or water, just a quick idea!

    I have the same problem with coconut milk!!!! It always curdles. I always end of melting my coconut milk and then whipping it to get lumps out, and the letting it set while i whip it. But it still doesn't have the best results...

    Love the recipe Lauren!!! so happy to have you back!!! I did notice the wobbliness throughout the whole video though as a couple people have mentioned. not sure what that may be from??
