Super Flavorful Chicken and Corn Chowder

  • My Chicken Corn Chowder is absolutely BURSTING with flavor and texture. It's perfectly creamy without being too heavy--perfect for using up that summer corn! Plus, you can make enough for the whole family in less than an hour.

    Ingredients
    6 strips uncooked bacon, cut into pieces
    3 Tablespoons unsalted butter (42g)
    1 medium yellow onion, diced (about 1 cup/140g)
    1 red pepper, diced (about 1 cup/140g)
    1 Tablespoon diced jalapeno (seeds and ribs removed)
    1 ½ Tablespoons minced garlic
    ¼ cup all-purpose flour (30g)
    1 teaspoon table salt (plus more as needed/to taste)
    ¾ teaspoon ground black pepper
    ¾ teaspoon smoked paprika
    ½ teaspoon dry ground mustard
    4 cups chicken broth (946ml)
    1 cup water (or use another cup/236ml of chicken broth) (236ml)
    1 cup whole milk (236ml)
    1 cup heavy cream (236ml)
    1 lb Gold potatoes diced into 1” cubes (you do not need to peel, but do remove any shoots)
    1 lb boneless skinless chicken breast or mix of breast and thighs (raw) (453g)
    2 ½ cups sweet corn, fresh, frozen, or canned (if frozen no need to thaw, if canned drain before using) (275g)
    Desired toppings. We enjoy this chicken corn chowder plain but also like corn chips, Fritos, or crackers, scallions/green onions, additional jalapeno, cilantro, shredded cheddar cheese, and more!

    Instructions
    00:00 Introduction
    00:18 Place bacon pieces in a large pot or Dutch oven. Turn heat to medium and cook until bacon is crisp. Remove to a paper towel lined plate and set aside.
    00:44 Drain all but approximately 2 Tablespoons of bacon grease (you can eyeball it, no need to be exact! I like to use a ladle and ladle out the excess and pour it into a can to solidify before disposing of it).
    01:11 Add butter to the pot with the remaining bacon grease and cook until butter is melted.
    01:21 Add diced onion, red pepper, and jalapeno and cook, stirring occasionally, until softened (about 5 minutes).
    01:43 Add garlic and cook until fragrant (about 30 seconds).
    01:52 Sprinkle the flour over the vegetables and stir until it’s fully absorbed. Cook another 30 seconds longer to lightly toast the flour.
    02:05 Slowly whisk in chicken broth until completely combined.
    02:26 Add water, milk, cream, potatoes, chicken breast, and corn.
    03:05 Stir in salt, pepper, smoked paprika, and ground mustard.
    03:31 Bring mixture to a boil and cook until the potatoes are tender and the chicken is cooked through.
    03:43 Once chicken is cooked through, remove to a plate and shred or dice. Set aside and keep warm (I usually cover with foil).
    04:08 Use an immersion blender to puree approximately half of the soup (see note if you do not have an immersion blender).
    05:10 After pureeing, return chicken to the pot. Stir reserved bacon back into the pot (or to preserve its crispness, serve soup topped with bacon crumbles, but don’t skip the bacon entirely, it adds so much flavor!). Taste-test the soup, adding more salt/pepper as needed (any soup that tastes a bit bland almost always needs a few shakes more salt!)
    05:30 Serve warm with desired toppings and enjoy!
    Notes
    Bacon
    The bacon adds a beautiful depth of flavor to the chowder that you can’t really get without it, but if you must omit the bacon use 5 Tablespoons of butter instead of the 3 listed. No other changes needed.
    Potatoes
    May substitute russet potatoes instead but I recommend peeling them before using.
    Chicken
    You may substitute a pound of precooked shredded or diced chicken instead! After pureeing the soup, add it to the pot and make sure it is warmed through before serving.
    Blender
    If you don’t have an immersion blender, you can transfer half of the soup to a blender in batches and puree that way. Alternatively you can use a potato masher to try and mash the soup though it won’t be as smooth/creamy this way.
    Storing/Freezing
    Store in an airtight container in the refrigerator for up to 5 days. I generally do not recommend freezing soups that contain cream as the dairy may separate, making the consistency and texture not as smooth as it ought to be.

    Made this recipe tonight, absolutely amazing! No one wanted to stop eating. I must’ve watched a dozen recipes and settled on this one, boy am I glad I did! It was phenomenal with frozen, super sweet corn. I can’t wait to try it with really good fresh in season corn!

    This is very important. Pieces of chicken can separate even from a whole piece because there is currently a skill shortage in the poultry industry. You want to make sure that all your chicken is out of the pot before you immersion blend. Otherwise, the ground up chicken leaves a texture and even flavor that overwhelms the other flavors.

      I was thinking of using green peppers, I really like their flavor. It does look rich so I thought the jalapeno might give it some balance? I bet it would be just as good with Turkey or even sausage? I used the canned chicken a lot. I think it's just as good.

    So I made it, we ate it, it's on my list of big pots of soup to whip up. Nice with bread and butter (we did rye) and my wife added croutons. I heartily recommend this recipe.
    My next pot will be done with a rotisserie chicken. Ease of shredding and chopping before the soup bath will be tested. 3 cups ought to do it.. I noticed that your photo has cut green onion garnish. Those look great! Next time.

    I changed a few things because of what I had on hand. I did green pepper, crushed red pepper, and celery salt in place of the red bell pepper, but the rest the same and I have to tell you it is absolutely delicious!

    Recipe halved
    4 slices chopped cooked bacon set aside for garnish
    Ladle out all but 1-2 T of the bacon grease
    Add 1-2 T butter
    1/2 yellow onion
    1/2 c red bell pepper
    1/2 T jalapeño chopped seeded
    1/2 t salt
    1/2 t smoked paprika
    1/4 t dry mustard
    black pepper
    Sauté together then add
    1-2 cloves minced garlic
    3T flour
    Cook 30 sec
    2 c chicken broth
    1/2 c water
    1/2 c milk
    1/2 c heavy cream
    1/2-3/4 lb 1” cubed yellow potatoes
    1-2 lb skinless chicken breast
    1-1/2 c corn
    Bring to gentle boil and cook until chicken and potatoes are cooked
    Remove chicken and shred or dice and set aside
    Purée 1/2 of soup in blender or use immersion blender. Don’t completely purée.
    Adjust seasonings
    Add shredded chicken
    Serve with bacon bits!

    quick hack to make this a bit easier buy a rotisserie chicken and just shred that up and throw it in at the end. great recipe mine turned out great

    Another little cooking tip. Save your extra bacon drippings in a refrigerated container. Use it for other saute dishes in place of oil or butter.

      The ground mustard does round out the flavor very nicely, but you can make it without it. The yellow really comes from a lot of ingredients and not so much the mustard. :)

    Would a white fish work to replace the chicken. I have a family member who now has a condition since COVID & can’t eat most meat, believe it or not, until he gets thru a treatment hopefully restoring his sense of smell & taste. I’m constantly looking for fish fishes other than frying.

    For the love of all that is holy, ALWAYS ALWAYS ALWAYS sautee your onion first by itself. Onion takes a while to caramelize and get that raw flavor out, bell peppers take no time at all to soften.

      I agree. However, when you are cooking the soup for an additional 30 to 40 minutes it seems as if the onions get done. Perhaps not caramelized, but softened. Let's not forget that most of the "chunks" get pureed...which finishes the now cooked onions off nicely.

      But if you caramelize the onion won’t that affect the color of the soup

      It will result in about 6 cups of soup so depending on how much each person eats, roughly 6 people at 1 cup of chowder per person. :)

    Doesn’t the soup curdle when boiled with all that milk and cream in it? I am leery.😮
