Love it! I am Bulgarian and the twist on the banitsa is great. Alex there are different types of banitsa, sweet with pumpkin called tikvenik, or sour with leeks, also some people add lemonade to the banitsa to make it fluffy and light. My suggestion for another Bulgarian dish is musaka, there is a similar one in Greece, but our is great also. Greetings from Sofia!

Probably the best video presentation of Banica I found in youtube. You should try to make it out of home made phyllo dough, it's the so called old style and it's really much more delicious! Bulgarian cosine is very rich and I believe you can show to your audience plenty of good recipes. Greetings!
It warms my heart that you came up with a Bulgarian recipe :) Will it surprise you that your "twist" is not that new? My grandmother used to make something veeeery similar, but it was called "mAslenitsa". They used to raise a pig every year and slaughter it by Christmas (yeas, doesn't sound very anumal friendly, but it was something traditional in the rural arеas in Bulgaria). They used to take the freshly butchered very fatty part of the belly, almost the same parts that bacon is made from, chop it and cook it until the fat was melted and the meat was well cooked in its own fat. My grandmother would then make homemade dough and make something like the lasagna style banitsa, but using the pork fat and the meat + cheese between the layers. It was more puffy than banitsa, and somewhat more fatty, but the taste was great because of that belly meat (again, from the same part of the pig as bacon), so I very well understand why it would go well together :)

great job on the banitsa! you could also cut the filo pastry is 10cm wide strips, place the egg mixture in one end and start folding until you end up with triangle piece of banitsa. make a few and place them on cooking paper in the oven

Very interesting take on the banitsa (one of my most favorite foods). There are many versions but the best ones melt in the mouth! If yours are like that then you have succeeded. Good work, looks tastier than a croissant even.

I'm hating myself for never writing the recipe down :/ That aside, I'm happy to see that you did tackle Banitsa and daaaaaaaamn - I will SO try this recipe :D On a side note: In my family we never used yogurt for the filling - just eggs and cheese, but I can imagine that yogurt might spice it up a bit :D

For a nice refreshing summer treat, you should try making Tarator, a cold Bulgarian soup made with yogurt, water, walnuts, dill and garlic. My two favorite Bulgarian dishes ever. Now for a bit of a rant about RUclips, why doesn't RUclips redirect me to this page after forcing me to sign in (again) before commenting? This would seem like common courtesy, as well as common sense! Also why do some channels home page only have one video listed when tapping on the link (not) helpfully labeled "videos"? this is so similar to a Greek and Turkish pastry, I can't remember the name but it's crispy pastry with spinach & feta cheese in similar shape. I eat it everyday when I travel to Greece or Turkish coastline, so good and it fulfill my daily veggie needs

Good job! This is good quality filo sheet you have. If you buy the cheap filo sheets in North America, you may have to use 2,3 per roll, so they stay intact and don’t tear when you do the roll.

We just make a giant roll and cut it after. It's not as dry that way :) it's not healthy but I recommend smearing butter all over the top right before baking because it tastes way better and gives an amazing crisp! I hope u enjoy and make more Bulgarian dishes😊 we got a lot of good stuff ;)
Also known as gibanica in Serbia, the plain lasagna style. Love your version with bacon and sage. I eat this dish with butter milk. It cuts nicely and neutralizes the fat. This food is designed for hard worker's, like cooks. :)

I like your style :) Up till now I made a баница traditionally, but I will definitely try it your way. You can skip the yogurt and black pepper in the filling btw. Adding some mayonnaise to the filling will be nice. Bulgarians sprinkle the banitsa with a combination of egg yolks a natural sparkling water at the end.
my mum sometimes makes me little banicas that are made in pan and they are ready for 10 mins! It's perfect for every meal of the day. Sometimes mum puts ham + white cheese or apple and wallnuts instead of just white cheese. You should look in forums for banica recipes if you want to make some :)
I know the Turkish version, with spinach and Turkish feta cheese. I had it in Amsterdam last month, freshly cooked by two Turkish women who obviously knew what they were doing. They made everything from scratch even the filla (sp) pastry. It was amazing!
the lasagna style is in bosnia/kroatia (maybe in serbia too) called "pita mekusa"! my mom makes it a little different, with curd, but it's basically the same

They call it "Burek". What we call "Burek" in Bulgaria is entirely different animal.

I like your style :) Up till now I made a баница traditionally, but I will definitely try it your way. You can skip the yogurt and black pepper in the filling btw. Adding some mayonnaise to the filling will be nice. Bulgarians sprinkle the banitsa with a combination of egg yolks a natural sparkling water at the end.

my mum sometimes makes me little banicas that are made in pan and they are ready for 10 mins! It's perfect for every meal of the day. Sometimes mum puts ham + white cheese or apple and wallnuts instead of just white cheese. You should look in forums for banica recipes if you want to make some :)

I know the Turkish version, with spinach and Turkish feta cheese. I had it in Amsterdam last month, freshly cooked by two Turkish women who obviously knew what they were doing. They made everything from scratch even the filla (sp) pastry. It was amazing!
