Japanese Fried Rice Recipe (Ramen Restaurant Style Chahan)

Fried rice is the perfect dish for using leftovers to make something quick and tasty. This ramen restaurant-style "chahan" uses typical ramen ingredients such as pork chashu, kamaboko fishcake, egg, and spring onion to make the ultimate fried rice!
INGREDIENTS:
- 80 g pork chashu
- 3 slices Japanese fish cake "kamaboko" - optional, kamaboko
- 30 g green onion
- ½ tbsp lard
- 2 medium egg
- 200 g cooked Japanese short-grain rice
- ¼ tsp fine white pepper
- 2 g salt - 1% of the rice quantity, approx ¼ tsp per 200g
- ½ tsp Chinese-style chicken bouillon powder
- 2 tbsp chashu marinade - see note
- red pickled ginger - benishoga, to garnish

Unfortunately it's not something that can be bought premade, but it's not worth making chashu from scratch just to make the fried rice which is why I included the substitute in the description. Sorry I couldn't be of more help, thanks for watching!
