hi, my the tablespoon of cream cheese added to the top of the batter actually stayed and cooked on top, I notice Nick's cream cheese went to the bottom of the cupcake, does anyone know why this happened?
+Andrea Guerrero Vallejo Strawberry may not be a good choice, much higher water content than raspberry and blueberry. Your cake may come out too watery unless you adjust the amount of liquid in your batter. Blueberry is a better choice.
+Andrea Guerrero Vallejo Hey Andrea! any other berries in the cake should be fine. When it comes to the frosting however It would be best to use a jam, for example, strawberry or blueberry. Frozen berries in the cake is fine, but add about 1 tbsp of jam in the frosting at a time, mix it, taste it, and add more if you need. Just keep in mind, the more liquid you add to cream cheese frosting the less stable it becomes so just add a little to start with :0)

As well as can you pipe these with white chocolate ganache frosting. Can you add white chocolate chips to the batter before baking, or would that ruin the consistency? Thanks for another delicious recipe!
+Lazer Storm Makes 20, yep white choc ganache frosting is fine, wouldnt add fresh raspberries to it though, use jam instead, and yep you can fold white choc chips through out. Goodluck! :0)

I am SO envious of people who have easy access to berries. In my country, the only berry we have is strawberry, and is only available for 1-2 months per year. Frozen berries are only sold at membership shopping centres, and are very expensive. Strawberries, even when in season are very expensive as well as it only grows in one place in the whole country. I once found a 150g package of strawberry that cost PhP500.00/pckg which is about 12USD. It was INSANE!
