OMG I was just reading your book "Hot hot dogs saved my life" and I came across the phrase "neighbor's cats are having puppies" and I just SPIT OUT MY BEER ALL OVER THE MONITOR! You taught me so much in such a short time. Thanks, I love ya... and not in a creepy way. Murphy;s Chicago dogs puts a towel in the bottom of the bun steamer - never gets soggy. the buns sit on a towel. I think their hinged lid diverts all the sweat beads of water back into the pan too so it doesn't drip on the bun.

amazing idea, I have a warmer and I used it for hotdogs and it works but not for bums, your idea of placing towel on the bottom of the perforated basket will work. thanks for your comments

Most of us use the on-board cooler with ice paks or gel paks to store our food. We use separate coolers for drinks. Drinks will almost always out sell the dogs. The on board cooler on the Big Dog Cart will hold food frozen for more than a day.

Great question. I only offer 2, a smoked sausage and a hot dog. So I can do a batch of sausages and place in the steamer to hold while I hold my dogs in the hot water. If you are serving multiple dogs, you would need as many 1/3 size pans if you are going to hold in water. If held in a steam table you can just make individual rows and stacks. Did that help?

Ben< If the cash cow comes with 3 1/3 size pans and a spillage pan would you remove the spillage pan if you was to boil the dogs? and if the cash cow comes with 2 burners does that mean only two pans can be used for boiling because it has to be direct heat? if so will the 3rd pan with a false bottom say in the middle would the heat have to stay on to keep the hotdaogs warm after boiling? and if its not direct heat in the middle would it still steam? sorry bout all the questions Thank you

But... I'd use direct heat on my dogs... 1/3 size pan. Then I'd have another third size pan with the false bottom and a smaller 1/6 pan inside that. This would keep chili hot and allow cheese or sauteed onions too.

I never heard of putting beer or anything else in the water while boiling Hotdogs will that work on a conventional oven also is just a steam cart?
Wow I have the bigdog cart i think I messed up i ordered half size 6" deep pans to use on my spillage pan question so I cant use two half size 6" deep pans in the spillage pans i was going to put about 2 inches of water in the spillage pans (That won't work) i did it sometimes made a gurgling noise every once in a while but thats it it heated the dogs if i cant whats the reason

I get a lot of black soot or ash build up on my pans that have direct heat from the flame as well as part of my cart what do you use to clean that it's a mess and gets everywhere. Anything I can do to cut it down? Thanks in advance and for the videos
That is a common problem if your burners are turned too high thus leaving unburnt gas as soot on the bottom of your pans. Turn the control knob down some and this will alleviate the problem.
Hey Ben, I'm just building my cart from an old shave ice cart I have. I'll end up with a full size spillage pan set up. I'll probably use the set up you demonstrated with the half size perforated pan for the dogs and two 1/4 size pans for chili and onions. my question is with this set up, how long does it take to get the chili up to temp using the indirect steam method and how many dogs can fit into the half size perforated pan? Thanks for all the videos and knowledge.
Hey James! There are several variables that I'd need to know first... like the BTU of the burners, how many burners per full size pan, the ambient temperature on the day used and the temperature of the product going in at the time. Your best bet is to test and check. How many dogs fit into a pan. I actually have a video on this. Depends on the hot dog size. There are about 6 mainstream sizes of hot dogs with the 10/1, 8/1 and 4/1 being most common. It also depends on inset lid, flat lid, rounded lid or roll top. Best bet... test it yourself.

I'm in East Tennessee, so the ambient temp outside could be 70 or 40 right now.. lol.. depending on if it's Monday or Tuesday. The dogs in the pan I'll figure out as I go, but in a day that it's say 70 outside and room temp chili, general time to heat the chili, 10 minutes.. 2o minutes?
Still have to know... the BTU of the burners, how many burners per full size pan, the temperature of the product going in at the time and how much product. I'm not kidding, even the density of the product matters. On average, it could be 20-30 but I was with a vendor in FL that had a crappy little cart and it took him over 1 hour to heat his chili over the spillage pan with about 1 inch of water.

There are so many variations of that, it's difficult to say. I'd google the recipes and try several until you find one that's close and then tweak it to your liking. :)

Yo, what do you do when you have to collect money, give change and give a dog? Do you wash your hands after each time you touch money, or do you just use a lot of latex gloves?
Most of us glove one hand and handle money with the other. Some use the latex and then the slide on loose gloves over those so we can change out quickly.
