Sounds great, the sweet Coke would go well with the onions. Instead of slicing them you should Juliane them and cut across the fibers. This makes the sautéed onion a little more tender. Cut the onion in half then cut across those little lines going through the onion. Great idea though.
Looks yummy. I will try but i wont put the coke in a cast iron pan. I dont put tomatoes in cast iron. I dont like the taste that it pulls from the iron. Thank you for your videos.

@Hot Dog Car Store If you want to try a really good dog. Melt some butter (you can add any spice to it). Slather the inside of the bun with it and let that butter soak in. Then add your dog to it. You haven't tasted heaven till you have tried it this way. I have added Garlic, Chili Powder, of Cayenne Pepper to the butter for a kick.
See we was told we could not use anything raw no onions by the health department . all has to be prepackaged when your in the south and your using canned chilli people know and they have words . Yet they still come back for more . lol. Your cream cheese moment about killed me thank you .

Hot Dog Cart Store If you really like bologna I use fried bologna on a BLT (bologna lettuce and tomato) with mayo on toast. Sometimes I up it to a club with ham and cheese. That and a big glass of cold buttermilk and I’m good to go.

Nooooo! Don't freeze the onions. It makes them suck. Do smaller batches at first and then start par-cooking them down and refrigerating for finishing on the cart.
I would use a bigger skillet. We do hot dogs with sauerkraut and mustard. That is the standard hot dog in Europe. And mostly we do blood sausage and bread sausage baked on a plate together with the onion and then served with Heinze ketchup or mustard. . Our buns are different too, Here we use french pistolet dough buns whereas americans use a kind of milk bread that we call sandwiches. Anyways...
