Wait, did you throw away all that mango flesh around the stone? After you cut the cheeks off the mangos, you should separate the stone from the flesh that's still left (which is a lot) or you're basically throwing away almost half the edible flesh of the mango. The mango is a common seasonal fruit where I live and we often eat the flesh around the stone directly and throw the stone away after all the flesh is eaten.

I would imagine something like avocado would work pretty well in terms of adding a creamy texture. Avocados turn brown when frozen, though, so I don't know that it would turn out looking as pretty.
