Bromelain is only in fresh pineapple. The following is from Dole themselves: Bromelain is a mix of proteolytic enzymes, which were discovered in the stem of the pineapple plant. While it is present throughout the entire pineapple plant - the stem, the crown, the peel and the flesh - most of the bromelain can be found in the stem. It is used primarily for medical purposes. Bromelain is a compound that aids digestion and breaks down dietary proteins. In fact, it is so strong that you could tenderise even a piece of tough meat in a pineapple marinade. However, you will only find bromelain in the fresh fruit. Fans of tinned pineapple will lose out in this regard.
His meal specs in this video are : 280 grams of rice 224 grams of chicken breast 100 grams of pineapple. 10 grams of olive oil drizzled on top of rice (I know he said this in the video but this comment is for anyone wanting to screenshot this)

Hey man, you should never bring nonstick pans up to high heat to sear food. It not only ruins the pans coating but the chemicals can fume off and leak into the food under high heat. Use cast iron or stainless steel to sear instead!
