So, if you remember me, I'm scared of the hdc, so, I did the 2nd row with dc's instead and it's still coming out very nicely! I'm trying to make the yarn go farther and the moss stitch does that very nicely, plus it makes it even softer!

Seems like the stitch marker only needs to mark the right corner, right? So it wouldn’t really have to be moved every row as long as it’s at the right corner, right? Am I missing something? Seems easier to leave it stay put.

Im not very talented when it comes to the circumferences of blankets but to make it bigger do I just keep going around and around til I get the size I want?
use a bigger hook! or if you are using different colors make sure to start in different spaces (not where you joined the last round) I have also seen people flip their squares after joining and starting a new round

I love Puzzle yarn. I love how that turned out. The moss stitch is a great stitch. I bet it would be pretty done in rows as well.

Absolutely. You can either do it row by row or add a set of double crochet to opposites sides of your starting circle.
