    I have made no fewer than 25 of Sam’s recipes in the last few years. However, pound for pound, this one might be my favorite! Protip: If you’re making this in your oven, I recommend putting your pan in covered at 350 F for around 10 minutes and then continue baking uncovered for another 25. It really helps with the soaking and mixing in all of the flavors before it starts to really bake itself in.

    I first saw your videos in March, after my surgeries for Parkinson’s Disease. What a GOD SEND you are (and I’m not even religious really!!). Have to be out of work at 56 years old because of my PD, bored to tears and depressed. Then you came along. So I bought a grill. Thanks All!!!! Used Chorizo sausage links cut into little quarter sized pieces. Came out perfect. Thanks Sam!!

      Shane Montgomery That’s exactly what we did. Used corn tortillas, but added some frozen corn. Gave just enough sweet to balance everything.

    I appreciate how you don't cut out little accidents here and there in the videos like a skillet with too much chili slightly overflowing or getting burned a bit. Really helps me get over my own mistakes in the kitchen and keep going and now I'm getting a lot better at cooking because of that. Definitely have to drop by Not Not Tacos now. Thank you, Sam!

    I've made something similar for years, but never thought to add Chorizo. Gonna do it for sure this next time! I've even used brown rice. Takes a little longer, but the flavor is amazing. I have also swapped the red sauce for a green sauce, because I enjoy the green more. Something in the red used give me really bad allergic reactions when I was younger. A can of black beans, rinsed first, is always great in it too!

    Recommendation for replacement of the Chorizo? Not a fan. Bacon? Hot italian sausage? Pork sausage?

      Charizo is pork if it's to spicy make your own charizo it's easy and leave out the chili powder use more paprika smoked or sweet👍
      2 pounds pork (finely ground)
      4 tablespoons chili powder (ground dried chile pepper)
      3 tablespoons ground paprika
      2 teaspoons dried oregano
      1 pinch ground cinnamon
      1 pinch ground cloves
      1 tablespoon ground cumin
      1 teaspoon salt

      @@dgdigital2659 definitely not the spice/heat of it I don't like, the stuff you buy in the store though in the tube just has a weird flavor to me and it's so mushy/greasy. Consistency thing more than anything I guess. Don't mind it so much at some mexican restaurants/taco shops, but I normally go for machaca if it's an option anyways. Maybe i'll try your homemade version instead. Thx

    I'd imagine you could do this in an Instant Pot, and just use Saute for everything, and then use the Rice button and seal it once you add the liquid. Won't have any crispy bits but it would probably taste just as good and would at that point truly be "one pan".

    This is a great recipe. I ended up adding 5 habaneros shortly after the onions and green peppers. Perfect level of heat for anyone who likes it a good bit hotter!

    Hey Sam, love all your content! Bought your knife and it came in on Saturday, the day i returned home from vacation. I was so happy and couldn't wait to try it out. I started cutting everything i could find. My girlfriend came downstairs and just started watching what i was doing. I still had the box it came in on the counter and all its contents... She read the note that's in the box. As she read out loud the part that says "I really don't want you to cut yourself"... I cut the top of my index finger (not bad just a good little nick) I was so car full not to touch the blade cause i have seen what can happen just by watching your show.
    I was so annoyed with myself that i got cut, i was trying to get the plastic piece back on the knife, i currently don't have a good safe place for it because i am moving in a few days and don't yet have a knife block.
    Thanks for everything Sam and your crew. It has really gotten me through this tough time and has inspired me to start cooking again!

      I believe this is a myth. Always heard it but if you season properly it won't hurt. Grew up seeing my mom use cast irons for spaghetti sauce,red rice, Pan enchiladas and she always had beautiful cast irons but she religiously seasoned after each meal so I'm sure that's the trick!

Having and, like your mom, maintaining quality seasoning is vital, because if the acids manage to get under the seasoning through a break of any kind, it'll dissolve the iron underneath and cause the seasoning to flake off over time.

      I don't know if you have any spanish or portuguese markets there but they would have it. You could make it yourself, but probably an Italian sausage removed from the casing with paprika added is easiest.

    Received my knives in Sydney, Australia today Sam. Haven't yet used them, but love the weight and balance! My son put me onto you guys several years ago, and there are zero posts that I have missed since (plus many of the 'older school'). He turns 26 in a week, and has visited the US every year for the past 4 years with food being very much a motivator (along with Tinder in Vegas?).     Ok! This was klucken filler! The pan could feed 6 to 7 easy. It was a chore trying to buy a reasonable size bag of basimati rice but once we had that the dish came together fast and deliciously. Sam you did it again. Thx!

    Just tried this recipe and it was great! Luckily it can go many ways, as my version ended up over "soupy", even after letting stand for 15mins. So, I stuffed some red-peppers with it, air-crisped, threw them in bowls.....cilantro, tomatoes, and sour-cream on-top, then finally slammed some diced avocado over the whole pile of goodness!

    My friend made me tostilocos for dinner at work tonight. I've not only never heard of it, but I'm now mad I've lived 41 years and have never had this amazingly flavorful meal.

    Great dish. We had to adjust as our butcher was out of chorizo but did have some buffalo northern Italian sausage. Worked great and the Buffalo sausage is very lean.

    This is kind of like a Mexican style Jambalaya. It's interesting that you let the rice cook in the seasoning before adding the liquids. I've lived in Louisiana all my life (26) and recently learned that frying the rice a little bit in the seasoning and meat, before adding the liquids, will add the flavor. You hit that right on the money!

      I recommend checking out chef Isaac Toups on the Munchies channel if anyone needs to know what Jambalaya is! He's got all sorts of authentic cajun/ Louisiana recipes with them. He did a video with Binging with Babish as well!
