- সুইস মেরাং বাটারক্রিম - Swiss Meringue Buttercream যাকে আমরা সংক্ষেপে SMBC বলে থাকি।
যদি ছোটবেলায় অনুপাতের অংকের চ্যাপ্টারে ফাঁকি দিয়ে না থাকেন, তাহলে কিন্তু রেসিপিটার উপকরণের মাপটা মনে রাখাটা খুব সহজ। ;)
১ ঃ ২ ঃ ৩ মনে রাখলেই হল।
এই অনুপাতেই আপনার সব উপকরণগুলো হবে।
ডিমের সাদা ঃ চিনি ঃ মাখন = ১ ঃ ২ ঃ ৩
অর্থাৎ আপনি যতটুকু ডিমের সাদাটা নিবেন, তার দিগুণ নিবেন চিনি আর ৩ গুন নিবেন মাখন।
আপনি যদি ১ কাপ ডিমের সাদাটা নিয়ে থাকে, তাহলে ২ কাপ চিনি ও ৩ কাপ মাখন নিবেন।
ঠিক তেমনি, যদি আপনি ২০০ গ্রাম ডিমের সাদাটা নিয়ে থাকেন, তাহলে চিনি নিবেন ৪০০ গ্রাম আর মাখন নিবেন ৬০০ গ্রাম।
১০০ গ্রাম ডিমের সাদা
২০০ গ্রাম চিনি ( আইসিং সুগার না। ঘরে আমরা রেগুলার যেই চিনি খাই, সেটাই)
৩০০ গ্রাম মাখন ( এইটা রুম টেম্পারেচার হতে হবে)
১ টেঃচাঃ লাইট কর্ণ সিরাপ ( আপনি এটা অনলাইনে পাবেন, গুলশান ডিসিসি মার্কেটেও পাবেন, এমনকি ডিপার্টমেন্টাল স্টোর গুলোতেও পাবেন।
১ চাঃচাঃ ভ্যানিলা এসেন্স
আপনরা ক্রিম টা ২ সপ্তাহ নরমাল ফ্রিজে রাখতে পারেন airtight বক্সে করে।
আবার আপনি ২ মাস পর্যন্ত ডীপ ফ্রিজে রাখতে পারেন।
অথবা, সব থেকে ভালো হয়… যদি আপনারা ডিম-চিনি-কর্ণসিরাপের মিশ্রণটা ডিপ ফ্রিজে রেখে দিতে পারেন। যখন ক্রিম বানানোর প্রয়োজন পরবে, তখন ডিপ থেকে ১০ মিনিট আগে বের করে রাখবেন। মাখন ভালো করে বিট করে, তারপর ডিমের সিরাপটা মিশিয়ে ক্রিম বানিয়ে নিতে পারবেন।

এই ক্রিমটা অনেক হয়। অনেক স্মুথ হয়ে থাকে। কোনই চিনির দানা থেকে যায় না। বাটারক্রিমের ফুল এই ক্রিম দিয়ে খুব ভালো হয়ে থাকে।
অনেকেই মনে করতে পারেন যে, এই ক্রিমটা হয়তো শরীরের জন্য ভালো নয়, এইটাতে কাঁচা ডিমের সাদা অংশটা ব্যাবহার হয়ে থাকে তাই।
এই ধরনের ধারনা করার কোনই কারণ নেই। কারণ ডিমের সাদাটা চিনির সাথে মিশিয়ে আমি ডাবল বয়লারে একদম ভালোমত রান্না করে নিয়েছি।
ডিমের সাদা অংশটা রান্না হওয়ার জন্য ৭০ থেকে ৭৫ ডিগ্রী সেলসিয়াসই যথেষ্ট। এখানে আমার মিশ্রণটি আমি ৮০ ডিগ্রী পর্যন্ত গরম করে নিয়েছি।
সুতরাং ডিম কাঁচা থেকে যাবে, এইটা নিয়ে চিন্তার কোনই কারণ নেই। :)
আমাদের দেশের এমন প্রচণ্ড গরমেও কিন্তু এই ক্রিম দিয়ে ডিজাইন করা কেক দিব্যি নরমাল রুম টেম্পারেচারে রাখলে কিন্তু কেকটার ডিজাইন একদম ঠিক থাকে।

I was kind of apprehensive at first because I was scared I would overcook the eggs or the cream would split. But I followed your instructions and I was very surprised at how easily it came together. yeah, I have heard many ppl face prob with smbc.. and one of a senior sister once told me that at the very first she cool down the syrup completely then make it meringue and do the traditional process..
and then I found another youtuber do this process but with different measurement...
so, when i gave it a try, it was wonderful and I never felt good about making my buttercream flowers with this .. :)

for 100 gm egg whites, its actually depends on the size of the eggs.. but if you choose the large size eggs, then around 3 eggs will be needed.

you may skip the corn syrup... but in that case, do not freeze the egg white and sugar syrup... just chill it by putting it in refrigerator and then make the cream..

salted or unsalted both butter can be used.. i used unsalted butter...
this much butter can be covered a 7 inch cake with 2 layers of cream inside...

I want to ask how long we have to freeze the mixture? As you are telling in Bangla language did not get you. Secondly can we use sugar syrup instead of corn syrup? Thirdly why you use corn syrup? I think for stabilising the cream that's why you use it. Fourthly how long it will stay in hot weather? I am living in Malaysia through out year it has hot weather.

light corn syrup ta na diyeo apni cream ta thiki korte parben.. tobe jodi apni shudhu eggwhites er mixture ta onek din store kore rakhte chan, sekhetre light corn syrup ta use korle sugar crystal form korbe na and deep fridge e rakhle aita akdom solid hoye jabe na.. it will remain as thick syrup...
and also it will make the cream a little shinier ..

you can't cover 3 tiers cake..
but a cake of 6 inch round with 3 layers filling can be done.

আপু, আপনি যেকোন বাটার ব্যাবহার করতে পারেন।
আমি আনসল্টেড বাটার ব্যাবহার করেছি। আমি usually Lupark এর টাই use করি। তবে ওইটা available ছিল না তাই আমি Amul এর unsalted বাটারটা use করেছি।
Kokhno jodi apnar kache baking shikar chance thake ami obosshoi korte chai apu. Eto easily khub kom karo kachei ami dekhechi shikhate. Stay blessed ❤

jemon Black forest cake - dairy whipped cream with cherry filling.
red velvet cake - cream cheese frosting.
Carrot cake - cream cheese frosting.
fruit filling sponge cake - Whipped cream frosting.
but if you want to decor your cake with buttercream, you can do that too..

corn syrup er bodole liquid glucose deya jabe.. but that might not be quite available in everywhere..
if you cant find the corn syrup, then dont use it..
and dont keep the egg white mixture in deep fridge..
just keep it in normal fridge and let to cool completely... them make the cream and you can now store the cream in freezer ..

apu... u can use any sort of butter.
my all time preference is Lupark unsalted or Emborg Unsalted butter.
but as those were not available at the moment i was making this cream and got this amul unsalted butter.. so, I used this one.. But I dont think I can recommend anyone to use this one.. I didnt like this butter.. :(
but U can use salted one too.. jemon Pran or Arong or Milk Vita.. etc..
About the Food thermometer, I bought it from Gulshan Dcc1 Mollah store.. i think u can get it from those baking supply stores in New market

that is different procedure.. in that case, you must whip the egg mixture first and make meringue out of it.. then add butter...
sometimes that release water, and the cream fails..

swiss meringue buttercream can stay longer than other buttercream in hot weather.. but still it will eventually become soft and softer...
so, frankly speaking, jodi buttercream ta pure butter diyei kora hoy, tahole hot weather -e aita soft hobei... and aitai natural.. but yeah, if you use vegetable shortening, or dalda .. then it may not be as soft as pure butter ... kintu ai shortening ba dalda, healthy na.. :(

karon dhorun 1cup egg white , 2 cups sugar and 3 cups butter..
so, mone hotei pare, 1c egg white + 2 c Sugar = 3 c mixture..
but thats not right.
coz when you mix sugar with eggwhites, the volume of sugar become liquid and it reduced.
so, apni sugar melt korle aita onek kome jay.. tokhon 2 cups thake na.
thats why i always suggest to go with the weight measurement.
but still you can try with 1 cup mixture and 1 cup butter.. i think this will also work.

tarpor o try to work in comparatively colder area. better if you work in AC room.
and when you make the cream, make sure the butter you are beating is not already too soft.. the butter should be slightly cold and firm and while beating it will eventually get its fluff.
