This show is timeless. When I was a kid in 2010 or so, I bought the DVDs of BTAS. I still connected deeply with this version of Batman even if the series was nearing its 20th anniversary. This is also my Batman. On top of this, Mark Hamill and Kevin Conroy reprise their roles in the Arkham games, which were another huge part of my childhood.
BTAS was my intro to Batman too growing up, so naturally it's my definitive version of him as well even compared to the Tim Burton movies or the Dark Knight trilogy. And yeah, of course Kevin Conroy will always be the definitive voice of Batman for me too. Never really been able to pick just one episode as my favorite though, cuz there just too many great ones! Heart of Ice is an obvious choice of course, but there's also Perchance to Dream, Almost Got 'Im, Two Face, Robin's Reckoning, etc. And Mask of the Phantasm is easily one of the best Batman movies ever, both live-action and animated combined.
