      Jis flour me 12% to 14% gluten content ho use strong flour kahte hi

      Eggless croissant dough
      1KG - flour (strong)
      20grm salt
      80 grm sugar
      25 grm dry yeast
      80 grm gluten powder
      10 grm bread improver
      80 grm unsalted butter🧈
      50 grm powder milk
      350- 450ml water(50% ice🧊)
      500grm - butter 🧈 for dough rolling

      1 chilo grammo - farina forte
      50 grammi - latte potente
      20 grammi - sale
      80 grammi - zucchero
      25 grammi - lievito secco
      40 grammi - glutine in polvere
      10 grammi - polvere per migliorare il pane
      80 grammi - burro non salato
      5 n. - uovo di grandi dimensioni
      240-260 ml - acqua refrigerata
      600 grammi di burro per sfogliare la pasta
      (laminazione della pasta)

    I was in europe and the bakeries there do NOT use eggs in croissants. They may brush it on the top, but there are NO eggs in the dough. ??????
