Conjuring The Blues Brothers With The Improved Orange Whip

  • As you may know I don't typically recreate drinks from Pop Culture, for some reason it just doesn't really do well on this channel. But when I am moved to do it, I like to try my hand a creating my own version of the drink and the challenge is always to keep the original intent behind the drink intact while (hopefully) elevating the experience of it. Making this drink was a LOT of fun and it's inspired me to do more of these, so stay tuned for them in the coming months.
    Two Events Lead me to the creation of this drink. The First one was a mistake by the Official Blues Brothers Instagram account. They reposted a clip of Greg from How To Drink making an Orange Whip but credited it to me. The second was a conversation I had with my friend Eric who I had just met and we were talking about Haitian Rum and Clarin and how amazing it was. As I was having this conversation with him it all just came together in my mind....Orange....Vodka....Rum....Cream....I have to make an Orange Whip! And it has to be with Haitian Rum!!! Yes! I got it! So! This video is dedicated to Eric and the Official Blues Brothers! Thanks for the Inspiration, hopefully I came up with a recipe that is fun to make and delicious while keeping the spirit of the Late Great John Candy Alive!
    Truth be told this is a little bit of a strange video. We had to edit in a different way because the technique of actually creating the drink is a bit involved.     Here's The Specs:
    1oz (30ml) Rhum Barbancourt Blanc
    1oz (30ml) Coconut Fat Washed Vodka
    .5oz (15ml) Velvet Falernum
    1oz (30ml) Heavy Cream
    1oz (30ml) Orange Juice
    .75oz (22.5ml) Lime Acid Orange
    .5oz (15ml) Simple Syrup
    1.5oz (45ml) Soda Water
    1 Egg White
    Top Off a little extra Soda Water!
    To Make Lime Acid Orange Combine:
    1 Liter Freshly Squeezed OJ
    32 Grams Citric Acid
    20 Grams Malic Acid
    To Make Coconut Fat Washed Vodka Combine
    300ml Vodka
    2 Tbs Good Quality Coconut Oil
    Melt coconut oil over low heat and put into vodka. Let sit at room temp for 2 hours then put in freezer for 4 hours. When fat is fully frozen extract from container. Use a Wide Mouth Container!

    Last year Blues Brothers came on TV. I was like why not. I saw it when a youngster and could not remember the premise. I called the whole movie. Hilarious. Old Skool funny. That kind of humor seems gone now. Great homage to the movie!

    I finally learned how to make a good Ramos and now it's one of my top 5 favorite cocktails!
    The fact that you reconstructed this as a Ramos style fizz makes it all that much more appealing to me. Great stuff as always!

      I'll admit its one of my least favorite cocktails to make, but a good friend gave me the tip off putting the shaker in the fridge to help build that head that rises up out of the glass.

    Holy Crap!! Last night was channel surfing before bed and landed on the Blues Brothers. It was the scene of the big concert in the hotel ball room filled with cops and John Candy ordering a couple of Orange Whips. I wake up this morning and I see your video. Spooky!!!! Gotta try one now

    You might find this interesting. In my travel in the Caribbean, I saw miles of orange orchards, but the fruits weren't what we find a the grocery here in the US. They have something they call a sour orange that has green shades on the skin and a flavor somewhere between orange and lime. Super interesting.

      So true! I'm from Jamaica and it wasn't until I came to the States that I saw an oranges actually being orange. Knew of course they existed, just never actually had one.

    I just recently made a Dr J cocktail from Dave Arnold's book using the lime strengh orange juice. What to say, I really loved the vibrant taste of the acidified orange juice compared to regular orange juice. I think all cocktails having orange juice should be revisited and the recipe adapted using the modified oj. Being a chemist I found fun to mix those acids in the kitchen and getting to taste the product, can't say I can do that while at work! Cheers!

    So yesterday I made a drink which had some similarities but was a lot simpler. Same ingredients minus the vodka, cream, acidified juice and soda water, and subbing Cointreau in for falernum. Obviously a completely different drink, but similar enough that I could use your specs as guidelines to tweak it more to my liking. The foam was amazing first time, but it was a bit sweeter than I liked (and I usually like sweet things). I decided to take out the simple syrup, but that left very little foam. Finally decided to balance the sweetness with some acid, but I don't have the resources to acidify my juice, so I added .5 oz lemon juice and it turned out excellent even if there was less orange to go around. When I get a chance to make some lime acid orange, this will be what I'll experiment it with first, because I think that would make for an awesome drink.

    This is insane!!! You know what I would do to make it more like an Orange Julius is fat wash Vanilla Vodka. When I worked at my casual dining restaurant I would make Orange Julius all the time

    Nice call on the Crystal Head. Usually I'd go with Tito's or Stoli for vodka drinks (maybe Sobieski as economy class) but Crystal Head is necessary for this.

    What a coincidence. I *just* made this cocktail from the How to Drink video for a movie-themed cocktail Zoom less than a week ago! Honestly it was pretty tasty, but certainly lacking in complexity. I'm intrigued by this version to be sure, but I don't know if I'll be making it any time soon given that some of the ingredients are a little involved. Definitely going on the list for some day though...
    As for the shake time, do you think a Hawthorne spring or agitator cube would help, i.e. shorten the time and lower the necessary effort?

    Really good! Despite the 1.75oz of orange, i could still use a bit more of an orange kick. I think it would screw with the cream emulsion if i put it in the main shaker with everything else, but would a bar spoon or so of orange oleo saccharum mixed into the club soda work? Definitely trying it next time.

    I always thought John Candy was ordering the non-alcohol beverage you would see circulating in one of those orange whip machines behind the 7-11 counter. They where pretty common in the 70’s

    you can remove the spiral from your strainer and put it into the shaker with all the ingredients. This way you get a lot more air into the mix and whip and fizz everything up much easier. Haven't tried this technique with this specific drink but I suppose it should work like that.

      A blender ball works great for this too. I prefer it to the spring because you get the same aeration without the hassle of untangling it

    Orange Whips are supposed to be blended to a thick frothy beverage, like a milkshake.

      There's a huge difference between shaking and whipping. An Orange Whip is actually an orange creamsicle milkshake with alcohol.

      Adding a blender ball help big time with the whipping in the shaker. Great if you can't flash blend

    Helpful tip: If you are planning to use coconut oil for fat washing make sure you use virgin and not refined coconut oil. Refined coconut oil has a neutral flavor and wouldn't really add much to the vodka

    When you use orange juice for a cocktail do you use a juicer and put in a whole orange or just juice the inside

      Probably not although you could probably sub agua faba for it, buuut for a fizz where we’re building up foam like this it may not work right and get the same effect

      It’ll last about a week. I usually cut the recipe down and commit myself to a lot of drinks with it :)

      @@TheEducatedBarfly thanks, instead of citric acid, you mention would you mix 50/50 lemon and lime to orange juice. Is this the correct what the current ratio would look like. 100ml lemon: 100ml lime /200ml orange juice.

    All errors or issues w/ the video are forgiven because you used Crystal Head Vodka given it's connection w/ Dan Aykroyd. I'd have given you bonus points if you had edited in a quick clip from one of his sales videos for said vodka.

      @@TheEducatedBarfly In terms of foam production from egg white only the reverse dry shake may be inferior. But, in this case, wouldn't it mitigate the curdling problem by chilling all of the ingredients before adding the egg white and cream?

    Woah! What's with the editing and the constant cuts. One of the best things about this channel was the way it just flowed. Hate the clunky cuts on STB and How To Drink. Please don't make this a regular thing.

      It’s not going to be a regular thing buuut for this episode it was somewhat necessary. We only use those jump cuts if we absolutely need to. Style will stay the same as always :)
