I always use a sweet marinade when I cook salmon, but never even thought to dip my salmon croquet in maple syrup. I dip mine in Yum Yum sauce. Now I gotta try this!!! Hey ya'll, did anyone else grow up calling these salmon "patties"? Or is just me 😂

I LOVE what you said about Barracuda! I was in Belize years ago and caught 2 3-footers. My guide cleaned them, seasoned and cooked them and it was some of the best fish I ever had! Smaller is better if you're worried about ciguatera toxin, that accumulates as they age.
Bluefish on the East Coast are similar; You want them small before they get older and gamey, and definitely cut that dark meat strip out.

Born in Mississippi raised in St. Louis salmon croquette is one of our favorite things to do so I love that. I’m in Arizona now when I go back home to visit all my people they do semi quick ass for me for breakfast and rice and all these other with the gravy and everything like that and I think that’s wonderful and special. As I’ve always said that it is hey we can look at as a cliché. You can’t take the girl out of the country but you can’t take the country out of the girl and I’m always be that way a country girl. And I think appreciate you and your family for bringing that to us. Bringing it back home. Bringing it back home my friend. Thank you so much that’s awesome.

I grew up in salmon country so my dad and uncles would get a ton so my gramma and mom would can the extra salmon we didn’t eat fresh cooked. But I loved salmon croquettes cuz it was the only way as a kid that they could get me to eat fish. But I live where I can get fresh fish off the boat. And I have a meat cleaver so I’ll think of doing it with fresh salmon 🍣 . I am going to try this. Never dipped it in Kero or maple syrup but my moms a diabetic. We had a dill based tartar sauce that’s not sweet but savory. But I’ll try some maple syrup just once cuz I do have it. And my homemade tartar sauce. So will compare. Thanks for posting this

I put the uncooked patties in the fridge for a couple of ours to firm up. I also use an egg in the mixture. I fried both side on high heat to get a nice crust then finish in the oven for 8 minutes.

We have Kayro syrup here in Northwest Indiana! Thanks for the flash back.
