Cowboy cookies were easy to make, nutritious,filling and kept a long time so they were perfect for on the trail. Kind of a power bar for them. There are a lot of different versions of the recipe. I believe Quaker oats had one on their cans of oats years ago.
I have made 4 batches of these cookies and each time I add a different dry fruit like Raisins, Cranberries and it takes the cookies to other level Thxs you

My mother made Cowboy cookies all the time. She would whip up a big batch to keep in the fridge and we would take a scoop out and bake. She never put coconut in hers but, that looks delish. As a Texas girl growing up in Dallas I always thought my mom called them Cowboy Cookies...well you know. This brings back such wonderful memories. 🤠
Legend has it, some cowboys wanted to make some cookies so they just dumped all these ingredients together and that's why it has oats, pecans AND chocolate😊😊. Texas has a grocery store called HEB that sells its own brand of cowboy cookies. They're pretty good!

Oh my gosh! I love to make these. I have changed the recipe i use severally, since i started making these 12 years ago, lol. I pulse my oats and pecans and coconut till my ancestors say stop and uae it as part pf the flour. They are so darn chewy and good. They are dangerous!

I've liked all the Preppy Kitchen cookies I've tried so far, but these are my favorites. The amount of oats is not enough to make them an oatmeal cookie but makes for a perfect chewy texture. I used bittersweet chips and toasted the coconut to make them less sweet, and I'd do that again. Next time, I want to try a mixture of bittersweet and milk chocolate chips. Makes an ideal number of cookies, too!
I just made these cookies, followed the recipe to a T. They are delicious, with the nuts, chocolate and coconut this satisfies all the wants. A bit of crisp, sweet but not overly sweet. I am sure raisins or cranberries or seeds could be used as well. Great recipe. I am also making your cream cheese cookie right now, will post after baking

I just made this for one of my Christmas cookies. IT IS SO DELICIOUS! Nice & Chewy! Instead of using chocolate chips. Pecans, & coconut Flakes, I decided to use White chocolate, Craisins, & Walnuts. So So Good! Everything you make that I've tried is amazing! I'm also using your chocolate crinkle cookie recipe that I've already tried last year. And I'm making your bread pudding for my Family's Christmas Breakfast
Just made these. Still warm out of the oven! Literally best cookies ever and the dough is just as good to lick. Mmmm. John, I accidentally made these like how you like your cookies ( well minus the burnt part). I didn’t have enough oats so I use 1/4 cup of oats instead of 1 cup and use white chocolate chips. They came out DELICIOUS! Flat and chewy with Crispy ends. Next time I’ll add enough oats, but now I can also make these! Thank you for such a great recipe!

An amazing cookie. I always have to make a couple of double ups on the recipe because it normally is finished within three days.
