It's J. Kenji Lopez-Alt and mayonnaise is just soybean oil, eggs, and acid, all of which help the bird cook properly. It's not like you're cramming Miracle Whip up the Turkey's ass after you cook it.
Word. It is also probably at its best if you make a batch of Mayo yourself. Then it is pure oil and eggs.
@@TheMimiSard I’m not sure if homemade mayo would be the best. Commercially produced mayo might have some kind of stabilizer, and one of he benefits of this technique is that herbed mayo, unlike herbed butter, rubbed all over the bird will not melt and ruin off. I would worry that homemade mayo would break, and the oil and herbs would end uo in the bottom of the pan, but my work might well be unfounded. Maybe the next time I roast two Cornish hens (which I like to do, so I can eat a whole half bird without feeling like a pig, and have plenty left for later use) I might do a side by side comparison. It’s been a minute since I made homemade mayo anyway (which I learned from Kenji). One technique Bacon didn’t mention, which I was just reminded of in a video Kenji posted today (inspired by him seeing this video!), was to dry brine the bird with a mix of two thirds salt and one third baking powder. I vaguely remembered hearing about this dry brining method for poultry, but it was good I saw it again, or the next time I tried it I would have probably not remember hat it requires baking powder, not baking soda.
Jimmy you gotta trust us - Kenji knows what he's doing! I haven't had the mayonnaise turkey but I'd def try it. Kenji actually ties science into his cooking and thoroughly tests his recipes.

@@CPUGaming If Kevin Bacon gave me shout-out on national TV, he could mispronounce my name all he wants. And if you saw my last name, you'd know he would absolutely fuck it up. Although I guess for some of us Kenji’s is a bigger star can either Kevin Bacon or Jimmy Fallon, and it is difficult to imagine anyone not having heard his name enough times for it to be impossible to get wrong.

Kevin Bacon is an Icon and legend..I love his work from Footloose to Stir of Echoes. And much more..he's always been super down to earth..The Guardians kidnapping him in the Holiday special was everything. How can you not love this guy..a legend.

Man jimmy Fallon loves to interrupt people. Like calm down, let Kevin finish the story without interrupting every 2 seconds. If I was the host I would love to hear people's stories. I'm mostly a listener, not a talker. And my mom is the reason why I'm like this because she would always interrupt me when I'm trying to tell a story.
Is the host usually that annoying? I haven’t watched late night shows in forever. It made me want to puke listening to him blab on. Congrats to Kenji and Kevin Bacon tho

He gets excited and he does have a time limit on each segment, so he has to get in all the questions the fans want to hear before the next segment. So can’t blame him really
@@mrcowgamez6471 By interrupting he actually takes more time out of the segment. Kevin would have finished his mayo story quicker without all the interruptions. I actually wanted to hear what kevin was trying to say.
He’s also keen on drawing attention to himself - see for example where the band matched the key of what Kevin Bacon was singing and proceeded to play the bridge section (or middle eight or whatever it is) and Jimmy’s screaming over it. Annoying.

Kevin, great turkey recipe! Some 50 years ago, I was going to cook my first Thanksgiving dinner for my friends. I pulled out my mother's hand-written recipe for turkey. It mentioned to rub it all over with margarine. Now, not because her handwriting was difficult to read, but that I was really high on weed, I smeared an entire jar of mayonaise, not margerine, all over that turkey. All my pals thought it was the best, moistest and tastiest turkey they'd ever had!

I’ve never really thought all that much about Kevin Bacon, I didn’t dislike him or anything he just never excited me. Watching this, I’d love to pick his brain about life. He seems like a humble, knowledgeable individual.
Im like him, but haven’t seen him in anything for a long while. The last movie he made that stuck in my mind was The Woodsman, in which his wife costarred. It is a movie about a disturbing topic, with requires you to be able to have some level of empathy for a type of character one normally would not.

I did NOT have high hopes for the Guardians Holiday Special.... I kept having flashbacks to the Star Wars Holiday Special, back in the day, and my brain refused to believe this was going to be any different. I convinced myself the apocalypse as upon us. The Sun going Nova, the seas boiling, dogs and cats living together in harmony.
So.... I was very pleasantly surprised at how good it was.

I read that if you like a browner, crispier toasted sandwich to use mayonnaise instead of butter on the outside of the bread - it works and you don't taste the mayonnaise. Obviously it works on poultry too.

I don't cook much anymore but I cook chicken breast with a combination of miracle whip and Italian dressing and sprinkle my seasonings on top of it. The Miracle Whip or mayonnaise if that's what you use turns into an oil.
