Hey Doug loving the you tube stuff and your video fishing reports. I'm catching heaps of squid at the moment but I'm finding them a little tough. I keep them alive in the live well till I get home, brain them, clean them and straight in the fridge. You cook I lightly flour with salt and pepper, hot wok for a few minutes. When I buy squid it's heaps more tender. What am I doing wrong?
Hi Paul, We cook it quickly if doing the same way as you say, around 60 seconds a side if shallow frying. Or otherwise 90 seconds maximum if deep frying. Otherwise we make a squid salad and in doing this we quickly boil the squid rings in hot water with white wine for a minute or two and then take it out and use it in salads.
Hi Paul, sorry fir the late reply mate☺️ . Paul I find it best to let them sit in the fridge for at least a day or two rather then cooking them ASAP. You can cut them to desired piece size first and keep the pieces in the fridge in milk or Coconut milk fit up to a week.

If you put them into a live well or bucket of water they will constantly squirt water, sometimes clean and sometimes black. So best to put them straight into ice or in a saltwater ice slurry, but again they will squirt. There is a tool which we used to sell that instantly kills them and then they will stop squirting.

I live on the Clarence river, cann Squid be caught all along the east coast? I've only ever caught them down south.
