Iced Gingerbread Cookies - Twelve Days of Christmas - Day # 8

- Iced Gingerbread Cookies
1 stick butter, room temperature
3/4 cup sugar
1/4 cup light brown sugar, packed
1 egg, room temperature
1/4 cup dark molasses
2 1/4 cups all-purpose flour
2 teaspoon ginger
1 teaspoon cinnamon
1 teaspoon baking soda
1/8 teaspoon salt
Preheat oven to 350°. Line cookie sheets with parchment paper. Cream the butter, sugar, and light brown sugar in a large bowl.
Mix in the egg and molasses on a medium speed until combined. Be sure to scrape the sides and bottom of the bowl as needed to make sure it’s blended well.
 Use a cookie scoop and scoop the dough into approximately 12 cookie dough balls. Flatten the balls slightly. Bake for 11 to 12 minutes or until the cookies seem set in the center. Allow the cookies to cool completely before icing.
Royal Icing
2 egg whites
3 cups powdered sugar, slightly packed
1 teaspoon vanilla
Beat egg whites until frothy. Add the powdered sugar and vanilla. Beat until the sugar is combined with the egg whites. Pipe or spread onto completely cooled cookies.

I love Gingerbread cookies, bread, coffee.. all things ginger flavored! The cookies were lovely. Reminded me of days gone by..my favorite childhood memory was of sitting with my dad eating ginger snaps out of a brown paper bag and drinking sugared milked down coffee. I felt so grown up. I sure miss my dad. Thanks for another special memory. I love this series.

I love all the treats you’ve made so far! Here’s a little hint for getting molasses, well any sticky liquid out of the measuring cup: spray the inside of the cup with nonstick spray or rub a little oil in there before you add the molasses or honey or whatever.
Can’t wait to see what’s next! We have a cookie baking day coming up in a week!

I didn't have anything but the dark vanilla extract, so I used instead a peppermint extract, which was white, so it had a peppermint taste, everyone enjoyed them, wasn't bad with the gingerbread taste. Thanks for sharing the recipe Tom and Melissa!

I made this delicious recipe yesterday and 'OH MY' I have a new favorite cookie❣️ I doubled the cookie recipe but I tried the single Royal Icing recipe and had enough for all my cookies. I used the Pampered Chef medium cookie scoop b/c I am making several other types of cookies during the holidays. Thanks so much Tom and Melissa.

I love love love gingerbread/molasses anything. I’m making molasses amish bread this weekend. And I love royal icing. This is some good eating 😋♥️I will be using this royal icing recipe.
I’ve never made royal icing, but I also had no idea it’s got raw egg in it, that shocked me! 😳 lol
@@kelleydavis100 You can buy meringue powder and use it instead of egg white or buy the egg whites in the carton, I believe they’re pasteurized. 🙏🏻

Great recipe. Love them without icing. Tip for you. Swipe the inside of the cup with veg oil before you pour honey or molasses. It'll come right out without sticking and doesn't change the flavor.
